Inspired by this: I made this with dates. I soaked the dates in warm water, made it into a jelly like consistency, added peanut butter, some toasted crushed almonds, and eggs. Scooped them into a sheet pan and baked. Simply delicious with less sugar.

I think it would. I've tried another 3 ingredient pb cookies similar to this and a flax egg totally works. You might need to bake it a little longer though
Just need to make sure you use sugar-free peanut butter and jam, and you're set. Might want to add some artificial sweetener, otherwise, it's going to taste just of peanuts and a bit of sugar-free jam?
Nice and easy, but would be helpful if you had stated the sizes of the peanut butter jar and jam jar, so that we wouldn't have to look up the instructions below the video. Also, there's natural peanut butter with no sugar, I'm wondering if that would work since the jam is going to be very sweet. If we throw everything into a food processor would it still work okay to save some muscle power or does that change the consistency?

If you're watching this and you've never made jam or have seen it be the made, watch a video. Theres soooooo much sugar in jam is not even funny. What she said about the sugar being mostly from fruit (fructose) is completely false. If you're making these to cookies so they are gluten free and "healthier" because of sugar content use coconut sugar or monk fruit sugar. Here's my recipe: 1 cup - peanut butter (the real kind, not the crap she used in this video) 1 cup - coconut sugar or 1/2 cup monk fruit sugar(this sugar has a much sweeter taste) 1ea - egg (or flax egg) 1 tsp - baking soda 1 small pinch of salt - cream sugar and peanut butter - add egg, baking soda and salt (if you like vanilla add a 1 tsp in this step) -scoop and flatten with fork (so they bake evenly because they don't spread much) -bake at 350 for 10 mins *I adapted it from Alton Brown's recipe *you can use any nut butter you want, I've even made them with tahini and they taste like a halva cookie. Also - USE A RUBBER SPATULA TO SCRAPE THE PRODUCT OUT OF THE JAR! Wooden or plastic spoons like the one she's using only work for the mixing part, she's making her life harder than it needs to be.

Cookies like this usually bake at 350F for 10 mins, but in my opinion this recipe sucks anyways.

You could sure give it a try w/ flax faux 'eggs'; 1 Tbl. flax meal soaked in 3Tbl. water to replace each egg in a recipe.
