Delicious!! I made these this morning. I put a giant tray in the freezer and cooked the rest. I appreciate how you say ‘this is a no judge zone’, regarding ingredient and sauce subs. I needed to use what I had on hand. I did use cottage cheese instead of ricotta. I also used canned mushrooms instead of fresh. I blended all of the wet ingredients with seasoning before kneading into meat mixture. I also improvised the marinara sauce. I used your recipe. But I didn’t have ripe tomatoes on hand. So I used canned, sugar free, fire roasted tomatoes. The combination of sauce with meatballs is delicious and a beautiful presentation. This is a meal I willl be proud to serve to guests!! Thank you, Maria!! I do think you and your sweet family should open a restaurant in Hawaii. ❤️
I would LOVE to go on one of your trips! But they are never teacher-schedule friendly. Do you purposely avoid the summer or is it coincidence that they have all been during the school year? Just wondering- truly would love to go but I’m no where near retirement 😉

It gets easier over time. What I did was started by adding it to double the amount of water recommended. I slowly lowered the amount of water over time. It tastes delicious to me now!
