i am thinking of building something like this since unable to buy a commercial smoker seen at home depot the Louisiana smoker (hasn't been available to buy). i figure be a bit cheaper. think i would have the fire box right next to food box, a square opening with shelf for steam pan ( i like beer for steaming with smoke) into food box. the intake to fire box, same pipe with dampener, the exhaust lower so smoke fills chamber with dampener so have control intake/exhaust. when i use charcoal, will let get white then add wood (hopefully fresh cut green so really smolders). sure glad came across your build, you did a nice job, looks good.

You might keep the firebox door open more during cooks to feed the fire more oxygen and to better complete the flow from firebox to smokebox to chimney. Chimney is great addition

That’s pretty sweet. Great tutorial and I love that you included any issues and trouble shooting that needed to be taken care of. Most people edit it like every works out perfectly haha. I want to build one. Instead of the pipe for the heat intake i think I would build the fire box and cook chamber fully connected and with a larger opening for the heat to go through. You can always slide the fire closer or away from the cook chamber with a shovel.
the chimney and the damper are for sure the things you needed. awesome job man. I had a little barrel smoker that rusted out...for the cost of materials vs what they want for a new smoker, I think I'm going to go this route.

If you ever make another one , use the ceramic chimney square pipe, it would last for ever .... It won’t rust or nothing ...... you did an awesome job ....👍

Nice build But personally I'd have tiles lining the inner of the smoker for a cleaner inside. It will also create more steam as the tiles will be sweating

Since I would like to use this year round, I'm thinking about adding a propane burner as well. Years ago, my Grandfather had a pit BBQ, but he didn't like the draw on that, so I know this was an important part of the design. Nice on the brisket (my favorite!) & the ribs! :)
Cool, I’m going to need to demo and repair a section of my block wall, and use some of the recovered block for an “L” shaped BBQ. My cousin is a mason and will do all the skilled work, but I am going to talk him in to topping the L with a block smoke house, using covered channel from the BBQ fire pit to the base of the smoker.
Great build man, glad you got it working better. If you ever make another raise your exhaust vent from the fire side as you said and know heat rises :) Once I get a house I will have to build me one. Appreciate the upload the smoker is looking good Bro!!! A prep table would be a good idea and maybe some type cover for the area like a pergola if you get a lot of sun.
Congratulations! I hope the novel I wrote for your part 2 video provided useful information if not just inspiration to help you modify your beast. I tried my best to stick to commenting on the smoker functionality as my father was a bricklayer so...
I noticed in part 2 you showed a part where you had coals in the food storage side. How did it go when smoking as your heat and smoke source were on that side? I was planning on making a 6ft tall single stage smoker where the charcoal and wood would be in the bottom, then a water pan and then maybe 6 racks of meat. I would think that you wouldn’t burn though as much charcoal or wood this way. When ever I see an offset smoker they are just burning though coals and wood. My Chargriller Akorn is very efficient.
Before I added the chimney, I was burning through wood and charcoal like crazy because the heat wasn’t being pulled over to the other side well. Now that I got the chimney, I burn through much less.
@@FromTheGroundUpDIY what do you think about using a single tower with the wood and coals elevated off the ground, a water pan a foot above it and then racks every 9 inches or so? Think it will be too hot in there or too hard to control temp?
I'm really glad you decided to use the mortar over the foam. My fear is that when the foam gets hot, it will "gas off" toxic fumes into your meats and ruin everything. Remember, smoking meats isn't a beauty contest, no one will care what it looks like when they're smiling & licking their fingers. Great job man. Add a pizza oven.
This is awesome ! Question: How many bricks were used? how many hours were put in to complete your smoker?? Im trying to estimate and budget a smoker to build this upcoming spring with completion goal before memorial weekend
Thanks Danny! I used approximately 100 bricks for the firebox side & 230 bricks for the food storage side. I recommend getting 10% to 20% more than what you need! I ended up up wasting a good amount of bricks due to them breaking when trying to use my masonry chisel.
I’m not exactly sure on how many hours it would take to build it. It took me a couple of months to get it done. During the week, I would work on it 2 to 3 hours a day after I got off of work and on the weekends I would work on it 8 to 10 hours a day. It also took me that long due to design issues that came along the way and finding solutions to those issues.
I didn't know there was such a thing as "TOO smokey". My plan if for a grill on one side and a pizza oven on the other side (for bread and pizza since I am into sourdough}. Underneath each of those will be firewood and charcoal storage and there will be a work slab of marble to work and proof the dough with a shelf underneath for some dishes and utensils....sigh....after all that ADD a sink. After all that you will have a complete outdoor kitchen so just cover it with a ramada or a palapa.
I have a brick smoker I built in 2010 and the fire chamber is in the rebuilding process my biggest concern is the foam you used to seal and also you can put cement to seal holes but you will have to do maintenance every year on your cracks if you are in an area that freezes in winter. The water that freezes will destroy your brick work and the only way to keep up with it is to keep sealing with cement/ mortar . If you want to see my design let me know info@pointtees.com and I will send you pics of it now and when finished. My racks can be pulled out so you don't get blinded by the skoke

Just one question... how's the food? I have an offset smoker but I'm looking to do a similar build. Great info!
The food was good, just make sure you use wood with a mild smoke flavor. Using a combination of wood and charcoal worked best for me!
