      Glad it was helpful! if your water has to much calcium you may have some problems i just found that out after moving into a few area in Barcelona!

    Wow!!! I’m very impressed by this! This is a Great technique my friend! Very elegant and fancy! You did a phenomenal job!! It is something you would find in a Michelin starred restaurant and you’re explaining the step by step so easily! And besides, it’s with goat cheese which I absolutely love! Congratulations!     Love that you're going into molecular gastronomy, Spain is ground zero for that style of cooking after all. I haven't worked with this style in a long long time, i've basically forgotten everything lol. Great explanation and they look so elegant. Goat cheese and cream is a great place to start, and really it's all about repetition right. Great video, James. Cheers.

      yes it is! some of the best restaurants in the world are here in Catalonia and northern Spain! but i dont miss the hours!! haha enoteca at Hotel Arts has 2 starts and they do normally 16 hours every day! reminds me of London. thank you Geoff! hope you are doing well! all restaurants and bars are closed here again and they are talking about a full lockdown. stay safe!

    James what an amazing process you did a phenomenal job demonstrating and giving great tips along the way this is definitely something you would find in a Michelin starred restaurant or even a five-star restaurant. Just love the goat cheese spheres you made this is definitely some thing that a lot of people could do. Love this video

(The Ritz Carlton) as well!     excellent video! Too many others do not give specifics on volume. They'll pour a packet in the liquid without mentioning how much is in the packet. My products are in bulk. I'm surprised there are not more views. Great job.

Also, one thing I forgot to mention in the video, if your tap water has to much calcium in it, the reverse specification process will not work. It will turn into a thick gel.     Mine are falling apart in the sodium alginate bath. Then I increased the concentration it was better but not the best. Not like the ones you have.
    Some videos say I need distilled water.

      Yes try distilled and it also depends on the levels of Calcium that the liquid has

      @@ChefJamesMakinson I added calcium lactate 2% of the total weight of the liquid. The liquid was yoghurt/curd which itself has some calcium. Still I added but the results were inconsistent. I even froze it. It simply melted in the bath.
      Then I added xanthan gum to thicken it. Spherification happened but the outer shell was super thin.

      I had a similar problem with the water that I was using contained calcium as well. It won't develop a sphere with the liquid.

    That's a really cook trick! Does the puree liquid matter?...I mean, will some ingredients have an adverse effect and not allow the alginate bath to work properly on it, or are some things better to use than others?

      haha yes, it does buddy! you have to have calcium and sodium to work properly. so if you are using a non calcium based liquid (like an olive puree) then you have to add calcium to it to work. then there are other ways of making this as well. so haha it can get a bit complicated. also too much acid can also change things and the ph level. but the easiest way to start with what I showed in the video. using the alginate bath and a calcium puree.

      @@meseretcrockett4203 hey! well first you will need to make the purees and will need to add calcium lactate to it as they are not dairy-based, you may also need to use a cryovac machine if the liquid floats. as the liquid has to be submerged. you can also try using molds, to freeze the spheres then add them to the alginate bath. i will be making another video on this soon. if you need any more help, just ask me or email me!
