Is there a purpose to resting the flour? I read that glutinous rice flour does not really have gluten and it's usually related to the gluten factor why flour needs to rest.
Yes there is. Since we used hot water, its temp will somewhat cook the rice flour making it easier to work with and the dough is no longer hot to the touch.

irish potato is different from sweet potato... butchi is a dessert.. if u use irish potato (patatas) u dont get the sweetness.. others are using ube as filling..
i noticed that uneven shaped of the rice flour after u cut it with knife its because u flattened the dough so wide and pinch like a siopao. .. it u do it like a bit rounded when u inserted the filling and rolled to ur hands immediately..you get a perfect circle wrapped around dough on the filling.. just to give u a tip.. no offense meant.. ive doing it for a business..
the same shelf life on any other filling.. as long as the filling is not liquid in consistency.. if the filling is liquid consistency.. chances are it will dripped off the crust..
katrina taganguin unfortunately you cant. Using regular flour will make it doughy. The glutinous rice flour will make it gummy and sticky which is the right texture for buchi. 😊

lanz jumalon hindi siya pwede for this recipe. Kailangan kasi malagkit na bigas na ginawang harina kaya glutinous rice flour talaga ang dapat gamitin. Pag 3rd class flour parang tinapay ang kalalabasan. 😊
Hi Lanz, unfortunately you really need glutinous rice flour. Reason is buchi has a sticky-like texture and I'm afraid using a cake flour will not achieve that. 😊
carmencita Lilam... u need to rest the dough.. second it should be glutinous flour.. if u know palitaw.. the same happens to the crust.. becomes sticky and strechable..

Try to refrigerate the custard until it's hard but soft enough to scoop them into balls. It's like how you make chocolate truffles. =)
