Bimbo Battung My granny would separate the heads from bodies when they're alive. Then clean them kinda like shrimp. Then batter the tails and deep fry them. GOOD!! GOOD!! But boiling them gets you some good head juice! Lol For lack of a better word. But I've never seen anybody eat them whole.

I had fresh local Crawfish in Algiers LA as a kid in 1968, LOVED it!!!!!! If I remember correctly, they pan braised or poached them in a HUGE iron skillet with butter and lemon, and some Cajun spice of some kind. :)

mike sixx Some people use salt to purge the crawfish. I just thoroughly rinse and wash them out in the pot I’m cooking them in(I’ll do it until the water is clear)
