I'm a one pattie man all he way. A good burger is never challenging to bite into, and has a great balance of bun, pattie and condiments. Before compacting, the pattie should be no more than half the thickness of the bun, condiments should be no more than half the thickness of the pattie. And that's pushing it. Why waste two perfectly good burger patties? Just make two burgers.
You brought up my biggest hate with modern burgers (I guess gourmet burgers, is what you called it): If it doesn't fit in your mouth, if you can't even pick it up, if it needs fucking SCAFFOLDING, it's not a good burger.

At the end of the day, this teaches us that less is more. I don’t want to have a burger that I have to fight for my life to get a full bite. I want a burger with minimal ingredients, doesn’t fall apart and also tastes… damn good

What I like about you guys is that you own 2~3 high-end restaurants, but are nice enough to still enjoy some cheap fast food. Poor Jack, had to work hard to make a burger with such a small budget lol. I follow the rule, "fewer means more". I like my burger with patty, cheese, bacon, some onion, sauce and that is pretty much it. Too much more and I can't distinguish flavor. Also, if I can't bite all the layers, I don't like the burger.

You’re top of your game and as a casual observer the only thing I would offer a reminder of is that my fave chef Anthony Bourdain maintained that a burger should always be able to be eaten whilst holding in one hand. Top notch entertainment though and I’d have one of yours every day of the week 😀

Any burger that you cannot bite easily is too big. Not sure why there is this desire by many places to create easy to eat food that isn't easy to eat... It's like serving soup with a fork... You just don't!
