Christina Mei No, soft wheat flour is just cake flour. Double 00 flour is ground finer than most flours so it hydrates differently, while producing a chewy product and a soft dough.
I make pasta dough regularly(several times per week) -----it's much easier by hand!!!

Use a breadmachine, the dough will be smother than with the food processor. Or buy the philips pasta maker.

Maybe I'm overly cautious, but I would not recommend shaking a food processor with a fast spinning blade.
