- Learn how to make pasta dough in a food processor. Pasta is traditionally made on a work surface and not in a bowl. But if you are making pasta dough for the first time, please use a bowl!
Roll it by hand or with a pasta machine; whichever method you choose, it must be thin enough to read a newspaper through. Italians use a very fine flour called "00" in pasta dough, but all-purpose works well too.

Use a breadmachine, the dough will be smother than with the food processor. Or buy the philips pasta maker.

Maybe I'm overly cautious, but I would not recommend shaking a food processor with a fast spinning blade.
how would the blade get outside the bowl? rhetorical question. It can't. Familiarize yourself with food processors. You are indeed overly cautious.
Sorry im a bit late, as in a year late. But yes you're right. The blade on mine comes out easily, so be a little cautious. I stop mine and then just mix it around and then start up again.
I do it all the time so that everything chops equally without stopping and go in there with a spoon to clean the walls..
This "00" flour, is it "soft wheat flour"?

No, soft wheat flour is just cake flour. Double 00 flour is ground finer than most flours so it hydrates differently, while producing a chewy product and a soft dough.
