I'm not sure I understand where the issue is coming from... Have you tried offset path on any other regular shape? or check if you have expanded your shape + merged with Pathfinder.
When offsetting the logo, the points created with the pen tool at either end of the letters aren't offsetting as well, even those I've connected via pathfinder. any suggestions??
I think this is due to having very sharp angles on the edges that the offsetting gets a little buggy, or you have a lot of pen tool points on the shape, which also messes up the calculations slightly. Try simplifying the shape by selecting the pen tool and removing the points which are unnecessary, or just by Object > Simplify I think. Hope this was helpful.

@@tshombetownsend6935 Short answer - you probably have the highlight and main text grouped together and need to select each letter alone using direct select tool with the path. Longer answer - to use the shape builder tool you need to have expanded all letters into vector paths first, and you do that either through Object > Expand or by clicking on the text and CTRL/CMD + Shift + O. Later, you have to select the smaller text that you have created within the main text (The highlights) using direct select tool hotkey A and select these with one by one by holding Shift and clicking on each letter in order to select them simultaneously, then assuming you have created the pentool arcing shape over the text, select it as well. now that you have selected the Inner gray text with the pentool shape you have created, hold Alt and only drag over parts you want to erase. 3 Years late to the party but when I got to "offset path" it is greyed out and I cannot find anyway to be able to select it

I lost it since the 2:14. I do exactly that but it just works different than in the video. I also cannot select my letter one by one
