    Sunflower seeds instead of cashews! Fabulous! Hemp hearts for the rich deep umami fat. Brilliant. Love this idea and will NEVER regret my Vitamix purchase two years ago. Don’t know what I did without one. Love the additions of cherry tomatoes and peas in the comments… I may have to throw in some basil or arugula…. 😂😂 thanks again for a delicious recipe and calm presentation with that great voice as always.

    I would add 1/2 tsp of fresh grated nutmeg and a tsp of yeast extract to the sunflower sauce

    I just made this..omg so delish!! I screwed up and blended the mushrooms into the sauce so the sauce looks brown but sooo good. And so easy too.

    Just made it - family loved it.
    Fresh from the blender, the sauce has a very “sunflower-like” taste and smell, a bit like freshly mown grass. That worried me a bit at first - but after mixing with mushrooms and spinach and cooking for a few minutes that taste went away and what remained was really delicious.
    Try it! Easy and nice. Maybe next time I will try it with lentil or bean pasta for some extra protein. This could be the right sauce for this type of noodles.
    And just to get on everyone's Vitamix nerves: I've been using a Philips ProBlend 6 for _years_ - and it's great. The main blender container is made of glass, so no scratches or anything. Crushes ice, makes smoothies, comes with a few extra blender containers that also serve as transport and drinking cups. High power with 3D technology..

    Love the idea to sub Sunflower seeds, because I need to cook dinner for someone who is both mostly vegan and allergic to nuts. Good idea, glad to see how well it works.🌻

    White onion
    Garlic
    Mushroom
    Boil pasta in salt water
    Olive oil, garlic, onions, salt, pepper
    Saute for 5 minutes on medium heat
    Sunflower seeds
    Water
    Saute the mushrooms with olive oil and salt
    Add spinach
    Add the cream and everything together on medium heat

    I'd always soak the sunflower seeds (or nuts) to remove the phytic acid and then blend with fresh water. I sometimes use a mixture of cashews and sunflower seeds for a creamy sauce or else a soya/oat milk bechamel sauce is equally good.

    As someone who works as a barista, Vitamix is a namebrand that impresses me constantly. We use vitamix blenders for foam, and they always impress me with their power despite being used constantly, and in rough conditions. I would buy it if I blended things more, but I just don't. If you juice something or blend something more than three times a week, it's a brilliant investment 👌

      I quit smoking 40 yrs ago didn't last long but I consumed tons of sunflower seeds, gained 10 lbs and lost it..... what a brilliant idea!!!

      Agreed. We haven't got a high power blender so have to resort to a cream cheese sauce. This looks much more healthy and flavourful

    Love this! I like seeing different ways to create non-dairy cream sauces. I will watch any and all recipes for new ideas! I recently tried a new cashew sauce and it was SO much better than cream sauces I used to make many years ago. I look forward to trying this one.

    Just saw this video today. It’s yummy! My husband loved it too! I had some left over pasta I wasn’t sure what to do with it. It was perfect. I had all ingredients except hemp seeds. I looked up substitutions so I substituted flax seeds and a small amount of chia seeds. I printed this recipe out & noted to make again! Yum! 👍

    I really liked the sunflower seeds in place of cashews for a change. Everyone really enjoyed this recipe, and it was not difficult to make.
    I still use cashew butter and soaked cashews for my Indian recipes, but this had a really lovely flavor. Thanks again Wil!

    Lovely looking recipe, I'd add a herb (maybe thyme or tarragon) and use some of the pasta water to enhance the sauce's "clingability" though. I've never used sunflower seeds to make a cream sauce, I often use silken tofu myself. I've used a number of your recipes and I find them to be very accessible and delicious! The peanut noodles in particular were excellent.

    Using a little leftover hot pasta water instead of the plain cold water, would make this sauce even better...as is done in Italian cuisine for example 😋👌🙏🌱

    You are the FIRST chef (or cooking person), that i have seen that uses the BACK of the knife to scrape! No, I’m not a chef; hecc I don’t even qualify as a cooking ape 😂; but i learned long time ago to always use the BACK of the knife to scrape so as to Not Dull the Blade. 👍

    can this be done without the hemp hearts or will that ruin the texture? i don’t have the slightest idea where i could buy them without ordering them online, which isn’t always affordable (or accessible) in my case.

    I have the exact Vitamix and love it. I made this tonight and it is awesome! I didn't have sunflower seeds so I used cashews (ha ha) and it tasted great! Great recipe!!! Thank you!

    Thanks for this! I've substituted sunflower seeds for cashews making cashew cream, but your method sounds even better, adding sautéed onions & garlic to the cream! Will try for sure, Yay!! Sunflower seeds are easier on the budget and easier to digest for some of us!

    Looks Absolutely Delicious. I’ve Never Tried Hemp Hearts. A Little Anxious About Using Them Due To The Word…”Hemp”☺️ I Use Sunflower Seeds Regularly, But Only Toasted and Sprinkle On Salads and Other Dishes. Will add To Cashew To Make White, Creamy Sauce Next Time. I Tend To Use Coconut Milk Instead. Thank You For Sharing.💙

    Any reason not to use some of the pasta water when cooking the sauce and veg? Was thinking the starch would help thicken the sauce as well.

    Definitely a keeper!
    I just so happen to have a bag of hulled, organic sunflower seeds & will pull some spinach from the garden in the morning! Mushrooms to rehydrate.
    PS Love my Vitamix!

    Yum! I would never have thought to try sunflower seeds. If you use water from the pasta pot it makes the sauce more creamy :)

    Lay ho lay ho! I cooked this recipe today. Followed your indications (almost) 99%. The 1% or less is the nutmeg I used because I felt the dish requiered it.🤷 My way.
