I know I'm a bit late commenting but 10 minutes into the video where you wonder what to do with a room, I saw it as a way to make it into a kind of bedroom/hangout room of some kind. Where you keep all your memories or whatever. Just a thought. Awesome video.
Maybe you could turn that extra room into a storage room, add a couple hay bales to put in corners of the room, make some bridle hooks and saddle holders, etc. You could organize all of the items, maybe make some chests with tack equipment and grooming equipment. (btw i know you already have a tack room but the extra equipment that can't fit in the tack room can be kept in storage until other items are cleared up and can be replaced in the tack room.)

Now minecraft is like P.E.... I use my PS4 to play MC, and I used to have P.E. on my tablet, but I hated it so I deleted it. Now MC on my PS4 is like P.E. and I 𝘩𝘢𝘵𝘦 it. I wish I had made more barns and had more fun before it changed 😢 now I dont even know how to make a flat world to build barns! Also, the camera moves 𝘸𝘢𝘺 too fast, I hate it. I'm rlly sad cuz I used to love MC 😭 Anyways, this stable is so awesome violet! Ilysm, ur channel is the best!! 💕

a tip: when taming horses, try feeding them lots of golden apples beforehand! it speeds up the process a LOT
