That's called a grandfather paradox. This movie is mix of Science and fiction. So please don't think to much. Both thor's are from different time line.
No that's why cap return hammer to avoid grandfather paradox.
Also time travel is similar to that of dragon Ball z where it create multiple timeline.
Also Thanos is dead in past. And that gamora is in future hence guardians of the Galaxy never happened.

Maybe he forgot that ancient warned Bruce about creating another timeline because of this huge bargain.
But hulk convinced her that he would do his job and return the every single stone to it's original position so as they won't be distrupting the flow of time.
Plus cap was worthy of mjolnir because he met the same conditions as Thor met while Thor 1 and that's why he became worthy of mjolnir.so he took each stone after getting the guidance from Bruce which we were never told about and he went on a journey to put hammer and each stone into it's original position so that timeline doesn't shifts and his last stop was shield facility where he put the stone and decided to settle down.
So actually they never messed up with time and their was no time shift.
If you believe in the words of ancient one and strange both knew the possible future events and the reason that ancient wasn't agreeing with Bruce's plan was because she knew that dormammu would come to take over earth in doctor strange but when Bruce told her that it was strange's fault that he gave time stone to thanos.thats when she understood his plan that it was pre decided and she took the bait.
Secondly strange didn't tell Tony about which possible timeline is it as he wasnted to know if it was that 1 possibility where they would defeat thanos and to which strange said he can't tell him as if he does than it would never happen and strange knew how smart Tony is ,so he waited for the circumstances to make his final move by making Tony realise his final decision and than Tony understood why strange saved him at that point and that this was his final moment
