  • Red Velvet Cake Delight 🎂:
    Ingredients:
    • 3 cups (360g) cake flour
    • 1 tsp baking soda
    • 2 Tbsp (10g) unsweetened cocoa powder
    • 1/2 tsp salt
    • 1/2 cup (113g) unsalted butter, softened
    • 2 cups (400g) granulated sugar
    • 1 cup (240ml) canola oil
    • 4 large eggs, room temperature (separated)
    • 1 Tbsp pure vanilla extract
    • 1 tsp distilled white vinegar
    • Red food coloring (to your liking)
    • 1 cup (240ml) buttermilk, room temperature
    Cream Cheese Frosting:
    • 250g full-fat cream cheese, softened
    • 80g unsalted butter, softened
    • 300g icing sugar
    • 1/2 tsp pure vanilla extract
    • Pinch of salt
    Instructions:
    1. Preheat oven to 165-170°C (fan forced). Grease and line a 7-inch cake pan.
    2. Whisk flour, baking soda, cocoa powder, and salt in a large bowl. Set aside.
    3. In a mixer, beat softened butter and sugar until combined. Add oil, egg yolks, vanilla, and vinegar. Mix well.
    4. Gradually add dry ingredients in 2-3 additions, alternating with buttermilk. Add red food coloring as desired.
    5. In a separate bowl, beat egg whites until fluffy, then gently fold into the batter.
    6. Pour into the pan and bake for 40 minutes, or until a skewer comes out clean.
    7. For the frosting, mix cream cheese and butter until smooth, then add vanilla, salt, and icing sugar. If it gets too runny, chill it in the freezer for 30 minutes.
    8. Once the cake cools, frost it and use crumbs from the cake for decoration.
