Best to choose fresh. Or it will be too mushy and fall apart. Don’t forget to add a bit of oregano and parsley. Adjust seasonings during cooking process to a taste you’d prefer. Even the salt. I also like to add mushrooms and eggplant when serving as a side with fish or chicken. Don’t forget to top with feta cheese and have bread on the side. It’s amazing.
Wow, too long cook time for my taste. I like tender but not mushy potatoes and string beans with some bite. I understand you want tomato broth simmered for thirty minutes , but how about twenty minutes potatoes and ten to fifteen minutes string beans?

I thought they were supposed to add Greek oregano, a squeeze of lemon juice and a drizzle of olive oil at the end?
You need to clean thoroughly all the ends of the beans and never leave strings sticking out so that no one chokes on them
