    you can use a sharp prong device to poke holes in the skin and down into the meat itself so the meat absorbs the marinade a lot more and then put the chicken in the marinade. More specifically the chicken thighs. Then marinade for hours or even a day or two and then smoke . You will like this.

    when brining overnight, do we have to put it on freezer?

    I’m assuming brining results in a much more subtle flavor. Is that correct?

      Yes. More subtle flavor. Only caveat is not to over-brine vs a marinade where longer is better. 👍👍
