My mother used to make this in the 80's when I was in high school but she would add cooked ground beef and onions before the second can of Enchilda sauce. It was tasty. This makes me want to make it. She's been gone almost 2 years now. She would be 86 this year. A great way to remember her I think.

I don’t do Tic Toc, but I’ve been doing this for years. I stop after the cheese layer though and serve the rest as part of fresh cold toppings. Walmart had fresh individually wrapped large burritos in the Deli Department for $1. Makes great enchiladas.

Many years ago, my husband’s aunt gave me a cookbook which had the following recipe. A quick and easy Enchilada casserole. 1 lb ground beef, cooked and crumbled with a 1/2 onion diced. One can of red enchilada sauce, 1 can of cream of mushroom soup, 1 lg bag of Doritos( nacho flavored is very good), a 4 oz can of chopped green chiles, and 2 c of shredded Mexican cheese. Combine meat onions, sauce, sauce, green chiles in a lg bowl. In a greased casserole dish layer chips(broken up slightly) and half of sauce mixture. Repeat layers, top with cheese and bake at 350 for about 30 min or until hot and bubbly. Top with sour cream, epicanthic crema, and chopped cilantro if desired.

Yes, these do look really good, and like Thomas, my taste tester here always likes extra sauce, so I would get an extra can to heat up for on the side too. They have breakfast burritos out there 😋. I know where I'll be heading first in the store, cuz this is another one of your recipes I'm making. what a great idea!!!!!!!! What I like about this casserole is, I can get just 2 single frozen burritos and make it for myself. When you cook for one person, casseroles can be tricky to scale down. This will be a great one for me to try and it should do really well in an air fryer. Thanks for sharing this one :)
I make most cassarols for 1 person in a skillet on top the stove. Cook on low heat. I pre cook the meat so I don't have to worry about it getting done.

Making these tonight finally! Using the El Monterey frozen chimichangas I had on hand and replaced the pico/green chilis with a salsa verde. They’re in the oven right now, can hardly wait 🤤

My boss used to do something similar but she used chicken chimichangas and add black olives to the top with the green chiles. It was our employee christmas dinner main course.

I make and freeze burritos en masse every few months just because they're a fast lunch husband can heat up in the microwave. But when I saw your recipe...yay! It's a great idea for our large family gatherings! Fixing a big meal for all the kids and grandkids can get pricey, so this is also a great budget meal. I'll serve it with a big salad and some tortilla chips. The grandkids will love it. Thanks!
