Rancilio Silvia Shot Walkthrough

  • Video showing how to brew a shot on the Rancilio Silvia, including tips on how to "temperature surf" the machine by getting the boiler to cycle to it's top temperature (about 101C with a "float"), then running a bit of water to flush out the excess heat.
    Shots pulled are "traditional doubles", pulling 60mls in 28 seconds, using Kid-O from Intelligentsia (I called it Black Cat by mistake once in the vid). Dose is about 17g in a Synesso 14g basket. Grinder used is the Anfim "Best" home grinder, about $420Cdn / $300 US.
    PS - because of the white balance (shot under old florescent lights), the shots look blonder in the vid than they are. I'd say the colour in person was a mediumbrown / hazelnut tiger flecks. No blond dotting.

    Thank you so much for the video...just got the Silvia V3 for Christmas, but she has proven to be a hard taskmaster...I have been obsessed to get her to pull a good shot...realized that wasn't possible without a respectable grinder...unboxed the Compak K3 and the bottomless PF yesterday, and after dialing in a bag of beans, I finally pulled a textbook shot...my learning curve has been arduous, the hobby is time consuming and expensive, but what can I say...I'm hopelessly hooked... I have watched and rewatched your vid, so even after years on youtube, it has stood the test of time, and helped this fledgling make her first successful flight into the high, often unpredictable, air of espresso!

    Major tip: use freshly roasted coffee (within a week). Stale coffee is very difficult to make crema with.

    Every new silvia owner should watch this 2-5 times :) I'm getting mine in 2 days and I have watched over hundred silvia video. This one is my favourite, espressotec and seattlecoffeegear have nice ones too.

    You are definitely right. Apparently, I just knew of Visions Espresso in my backyard like just two weeks ago. I've had my Rocky for about going on four weeks now. If I only knew earlier, I would have got the Anfim you described.
    I did a recent MOD and posted it at your CG website under espressoaddict.

    consider yourself belonging to the .0001% of people on the American Continent who can seperate the two. Maybe the Canadian do it better on avarage since I
    know there are a lot of Dutchies who have immigrated to Canada.
    Btw, gotta love the flemmish accent. Its the sweetest. My tomtom has a female flemmish voice in fact.

    After trying 3 other machines I was going to buy this one , but too many reviews talk about a high temperature burning the shot . After watching this vid , it's obvious there needs to be some playing around with the boiler to get it right . After lots of research I think gaggia classic has a better temp control , so I'll go for that . I can always return it and try smtg else if I have to

    Thanks for this. I've had my machine for three months now and thanks to your post I'm getting consistent, delectable pulls from my Silvia/Rocky combo. Do us a favor and show us your microfoam technique via video. I'm getting decent creamy foam but would love to see your work.

    One thing, is there a grind setting Vs shot extraction tutorial around for the Silvia, everyone sasy how critical it is, but seem to leave it there.. nada :)

    Great video. I currently have a Z8 but am having some difficulty trying to find replacement parts for it. I think a silvia will be an acceptable alternative for the time being (now that I know how to use one). Thank you for the video.

    He said Anfim. When he noted it being the same price as a Rancilio that is no longer true. The Anfim's are up in the higher price range. Good luck if you want to spend more.

    Why not preheat the cups with the water from the temperature surf? Also .. I noticed that you're using a ridge-less basket. Does having a ridge make that much of a difference? Great video .. I've had my silvia/rocky for a few months now and this video really helped me.
    Oh .. I even bought a Bruce Lee action figure just like yours so I could have defense against bad espresso. :)

    Thanks for your detailed instruction video. I will definitely be trying your technique for frothing milk. Have a question regarding the coffee. I haven't had the Silvia for very long and can't seem to get a good tasting shot. It's always very bitter. It seems to pour at the right speed and the grind seems about right. I can only think about the timing for brewing and/or the coffee. Any recommendations?

    @CoffeeGeek @CoffeeGeek first of all, thanks for the video and your amazing site. Second, could you do a frothing guide just like this one? And my final question has to be, what does this kind of machine offer in comparison to a cheaper model. Because I am both looking at a Silvia but also at the Gaggia Colour machine (Espresso Pure Black) and the latter is a lot cheaper. I can get the Gaggia for 160 euro. Both look like good machines for making excellent espresso and latte's. Any thoughts?

    If you want to spend >1000$ for a machine that does make sense, however single boilers are the way to go if on a budget or can't justify spending more.

    Mark, did you adjust the OPV valve on your Silvia to get the 25 sec pull? I was having a hard time getting it to do that before lowering the pressure.

    I've had a Silvia/Rocky combo for over 4 years now. One thing I've noticed, you put alot of coffee in the PF. Not sure if the grinder is different, but all Rocky needs is 2 pulls for a double shot. I've read that if you can see the indentation of the screen and screw in the coffee, too much has been pulled into the PF. This true?

    How long should it take for the flow to start? I've waited and waited (8 secs. or so) wondering if I will choke the machine before the espresso starts to flow. Is that too long? Is it burning the coffee?

    ah we dutchies interpet American and Canadian as the same language. So i will refine my writings as North-American ;). Its the same for Most Americans wont notice the difference between the Dutch and the Belgian Language (hell, most cant even pinpoint these 2 countries). Even worse, dutch is commonly mistaken for German, thats a whole different language hehe.

    Nice vid, cheers. Really weird seeing such a dark roast though, you lose so much of the beans flavours as its the roast you are tasting not the bean. Ive never gone back to the dark side after discovering the light!!!

    Have you done a taste test? You know, taste a shot with Bruce Lee, then repeat another shot without Bruce Lee and let us know the difference. I bet the first tastes better. ;)

    Dude get a PID! You have no idea what temperature the machine is at with this method. Range could be +/- 10 degrees celsius doing it "blind".

    Too much work. Better with a Nuova Simonelli Oscar with a 2.5 liter boiler and heat exchanger which eliminates waiting for a single boiler to achieve the optimum temperature and evidently drops as it brews multiple shots. The Oscar is capable of brewing and steaming simultaneously. The Oscar has a much deeper tray which eliminates having to juggle useless trays to catch the water so you don't have a flood. Why would anybody spend their money on a machine that is so imprecise and poorly designed?
