The YM2612 is definitely a capable chip. It's amazing the sounds you can create from merely 8 data lines. (I am not kidding, the chip has 8 data pins; register select, read and write are supplementary pins for communication.)

The only problem with that is the sound chip in the genesis is a pain to program for. Either you will use presets from previously released games or learn audio engineering. If you use presets, everything will just sound the same unfortunately. Although on second though undertale uses a lot of samples from earthbound.
Using presets isn't really an issue when you consider there are dozens of excellent sounding games to choose from at all have their own instruments. And multiple instruments can be chosen from different games, the possibilities are still pretty vast imo.
