I think that might be the dish you wife liked the most. Its always nice to see her enjoying the food as well. We understand being shy and on video must be weird. And we should always try to support those working outside their comfort zone.

I am very impressed that you made apple pie! I have made many apple pies in my 63 years. I love a warm slice of pie with vanilla ice cream on the side. I use light brown sugar in my pie and it gives it more of a caramel apple taste. You did a great job, Andre! Much love from Indiana USA ❤️🇺🇸

@jonellamoore960 is correct, brown sugar adds a lot to an Apple pie. I usually do about a 50/50 of white and brown sugar. But the great thing about cooking is your can mold your recipes to your taste.

Tip: When the crust gets golden, but there's still cooking time left, you can place aluminum foil loosely over the crust to prevent it from over browning or burning.
Baking paper does just as well and you're not exposing your food to aluminum
Also, the part that tends to get burned is along the rim of the pan where the top crust meets the sides. They actually make silicone "pie crust shields" that cover just this area to prevent it from burning. Amazon carries them.

Apple pie is best when it's warm with ice cream. It's good with whipped cream too and you can also drizzle caramel sauce on top

Another great video Andre'! I can't believe you actually attempted a pie, that takes guts! Looked amazing, and don't sweat it, the first slice is always the hardest to get out intact. It is generally the "cooks slice" just because it rarely is pretty! We need to get you a proper pie pan, one with the sloping sides rather than perpendicular, that helps to keep the crust from falling in on the sides as well as getting better slices. How can we help you with that?? Sarah is such a beauty, I really love her addition to the channel!
If the butter gets too hot that is what happens plus a little to much water put dough in fridge to get cold and stuff. If you sprinkle cinnamon sugar after egg wash it awesome. Btw love your wife's reactions too

Chef Andre , old man from Alabama here , those are indeed beautiful apples ! I make fried apples especially for breakfast . It is very simple , take the sliced apples , put them in a skillet with plenty of butter and cook until almost clear . Then add brown sugar and cinnamon and cook until apples are clear and brown sugar is dissolved . Awesome video !!

You have an American sized jar of peanut butter, you should make peanut butter cookies. Three ingredients pb, egg , and sugar

@LadyIarConnacht you can add brown sugar, too. I know of 3 , 7, and 9 ingredient peanut butter cookies. But there is no need for a quick, easy recipe.
@LadyIarConnacht I've made those 3 ingredients pb cookies. And they are good! I cup of pb, 1 cup of sugar and one egg. That makes a small batch, and they don't really spread out. But man, they are good.
to make them extra good, score the top with a fork to make a grid and sprinkle with sugar...
I made an apple pie last week using 3 different kinds of apples: Fuji, Pink Lady, and Granny apples. Really delicious!! Especially good with either cheddar or American cheese melted on top of a slice of pie, and a scoop of vanilla ice cream. Instead of brushing egg on top, I use milk as it browns a bit less. The longer you wait to cool the pie the more it will solidify. Planning on making another apple pie this weekend. 🥰 As American as apple pie!!

First off, the first piece of the pie often is messy when it comes out of the pan. (At least for a lot of us, lol!) Your pie looked wonderful. Another way to enjoy eating it is instead of using ice cream cut a piece of pie, add a slice of cheddar cheese on top and then put it in the microwave until the cheese has melted a little and the pie is warm. Yum!
Yup, as the server/baker of a homebased pie, same with pancakes, I usually eat the first piece myself or set it aside for later... for myself.. rest goes to fam/friends or whom ever came over to eat some pie! Not that it matters, it all tastes the same so I guess it is just cook's pride to only present the best looking ones or something lol

Okay. Couple of issues I see as a grand champion pie maker...
We don't put sugar in the crust at all. Only flour, salt, fat (butter or lard) and ICE water. The water must be cold! And you never mix it with a machine, you do it by hand with a fork and do not over work it or it will be tough and not flaky. Second, it's not pronounced with a long A, but a short one, as in at and cat. Also, American pie pans slope more on the edges. They aren't straight up and down.
Yes, no sugar. My grandma's recipe calls for a very small amount of white vinegar. Sounds weird but it's really good. And you want to mix it as little as possible, of course.

You can also make Apple Crumble Pie which has no dough top. Instead it’s a covering of brown sugar, with flour or even oats, butter and spices. Also very good.

Nice and yeah apple pie is great. You can add pectin or flour to solidify it a bit more.
Or cornstarch. We also used instant/quick tapioca.
My grandma won an award and was on good morning america for her recipe if you want to try the true national US recipe.

So, what is the recipe?

5 to 7 tart apples
2tbsp. Enriched flour
1/4 tsp. Nutmeg
Pastry for (2) 9", pieces
3/4 to 1 cup sugar
1 tsp cinnamon
Dash of salt
2 tbsp butter or margarine
Pare apples & slice thin. Combine sugar, flour, spices and salt. Mix w apples. Line 9 inch pie plate w pastry, fill w apple mixture, dot with butter, adhust top crust, sprinkle with sugar. Bake at 400F for 50 minutes or until done. (Red hot apple pie- omit cinnamon and nutmeg from above recipe. Combine 3 top red cinnamon candies w sugar, flour and salt.)
Flaky Crust----
2cups flour
2/3 cup crisco
5 tbsp cold water
1 tsp salt
2 tbsp butter melted
2 tbsp vinegar
Mix flour and salt, cut in crisco and butter until mixture is like coarse crumbs. Add water and vinegar. Mixing with fork, form into balls and chill. Roll out to form two crusts. Foolproof.

If you want to get more apple taste from it, add in some boiled cider when you're making the apple mix for the pie. It takes American non-alcoholic cider and boils it down to a syrup. It packs a lot of apple flavor into anything you want to put it in. But its great for pies.

One reason apple pie became so popular was that apples were always available. They will grow almost everywhere in the US and will keep all winter without refrigeration. In the days before refrigerators and cheap imported fruit, you could get apples when you could not get any other fresh fruit. In colonial times they grew large amounts of apples in the north east for cider as well as for eating and cooking.

Pie crust needs to be done by hand. That way you keep the cold butter in bigger pieces and you can feel the dough so that you don't add too much cold water. Use your rolling pin to transfer the pie crust to the pie tin. Love watching your videos!
By hand... More like by pastry cutter. Only way I mix my pastries now. Keeps the butter cool, and mixes just right. Electric beaters tend to overwork the dough pretty quickly.

Hi Andre, great job! That looks so delicious. There are many different ways to make apple pie, you had a very good recipe. For my pie crust I use half butter and half Crisco which is vegetable shortening. I find that I get a flakey crust that way. Also after the butter and Crisco is added I put in 6 Tbsps. of ice water. The colder you can keep the dough the better the pie crust. We also don't cut our apples quite so thin. I take cornstarch, sugar and cinnamon and then coat the apples with this mixture and place in pie crust. Then as it bakes the juice from the apple thickens with the cornstarch. Its okay if your pie crust is a little more moist. Don't let it get too dry. Instead of putting an egg wash on top, we poke holes in the top crust and sprinkle sugar on top. It looks pretty and makes a little bit of a crunch on top of the crust. The key is to practice and find just the perfect recipe for you family, there is no right or wrong. You did a wonderful job, so proud of you! Oh and one last thing, your crust was a tiny bit too brown, to keep that f rom happening just lightly put some foil on top. They also have pie shields that you can by that protect the edges from getting burned, Just watch the last few minutes and adjust the heat accordingly. :)

Wow, you made pie! It came out beautifully, it looks delicious. It's hard to pin down a favorite pie because there are so many very tasty options that are very different, but apple is definitely on the list of contenders.

there's a device that's an apple peeler & apple corer all at the same time that helps save time & effort....use the pie tin to cut out a perfect circle with dough next time....thats a pro move to use the lattice design instead of just putting the other dough on top....'al a mode' is what you call it when you put a scoop of ice cream with the pie

Excellent results for a first apple pie. Sometimes there's a pool of liquid, making the lower pie crust soggy. Your pieces held together quite well. Using what looked like Granny Smith apples one of my faves!), they are somewhat drier and firmer. And being tart, they pair well with the sweetness of the sugary mix. I've never done the 'syrup'...just layer the sliced apples (I usually leave the peel on) with butter, cinnamon/ sugar, etc. And... you got creative with your version of a lattice pie crust on top! Great job! 😊

Serving warm apple pie with ice cream is called apple pie ala mode and it was a dish created in the tiny Upstate New York Village of Cambridge at the train station restaurant.
I grew up in Cambridge. The restaurant was likely at the big hotel across the street from the train station. They claim the honor but it most likely came from one of the fancy clubs up in Saratoga. :P
@LadyIarConnacht yes, we always just called that hotel the train station hotel. Saratoga has enough food innovations to claim that they can let little Cambridge have that one for themselves.

In addition to cinnamon I add ginger and allspice, use brown or demerara sugar instead of white, and replace the butter with shortening for the crust. Before adding the apples to the liquid for the filling, I toss them in a bowl with a shot of bourbon and a squeeze of lemon.
