Buffalo has been used as a colloquial term for the American Bison since they were first sighted by the white man, outdating the term bison by almost 100 years. The reason they get "Bills" from William Cody stems from his nickname "Buffalo Bill" which refers to his connection to the American West and his skills as a buffalo (American Bison) hunter. I guess it's this delusion of companies thinking they have to constantly reinvent themselves every now and then - even if there is no legit reason? And I also doubt there was a legal requirement to change it... Maybe the owner just wanted to help his always-penniless graphic design artist nephew a little financial boost time to time? :D
The Cardinals originated in Chicago and adopted the Cardinals name while there. They wanted to move as the Bears were the bigger Chicago team. They eventually moved to St. Louis after getting approval to keep the team name from the MLB team. The NFL dragged their feet between the move though, letting the AFL form.
Fun fact, the lions color scheme was decided by the owners wife it was between red and white, orange and black, and blue and silver. You can guess what she chose. Another fun fact is that from 1948 to 1950 the lines change their color scheme to scarlet and black. I cannot imagine the lions in Scarlet and black that looks disgusting.
I don't know what city you said Paul Brown was from but I know a whole slew of people from Massillon who will be livid when they hear you mispronounce that name.

I think the thickness of the letters changes slightly between each version but that's all I can tell.

The Kansas City Chiefs actually have two versions of their logo, one for each side of the helmet. The arrow always points forward.
