Have you tried bamboo in a well-made dish? Bamboo actually became my favorite Thai ingredient of all. It will take up any flavor and the texture is great. You can have it with chicken, pork, or curry, etc. I once lived in a stilt-house in a rice paddy and went out back with the mother who dug up a fresh bamboo shoot right in the backyard. It was delicious, too.
