Japanese Rice Lager

- Ever want the benefits of a mass market lager, (drinkability, light flavor, not too filling) but in a craft beer package? The Japanese Rice lager is a perfect solution for your problem. Here I show the process and review the final result!
Recipe was designed with the Brewfather app.
My gear: (listed in order of appearance)
• Water Filtration: Carbon RV water filter
• Digital Mini scale, 200g
• Mash Tun: Anvil Foundry (6.5 gallon capacity)
• Grain Mill: Malt Master R2 Pro (modified with corded drill)
• Hop Strainer: LUCKEG Brand 300
• Fermenter: SS Brewtech 7gal conical with FTSS and FTSS extensions
• Hydrometer
• Keg: 2.6 Gallon Torpedo Slimline Keg
• 5 Gallon CO2 tank and regulator
• Custom built Keezer System with Intertap Taps
(Hydrometer, connectors, miscellaneous tubing purchased through MoreBeer)

For once it is great to see someone actually making a lager instead of a 7-hour 95 degree Kveik fermented, shake-carbed, 3-day grain to glass, hazy “lager”. Nice video format!

Looks like it turned out great. I too am a fan of Sapporo. I haven't had many Japanese beers but I'd safely say its my favorite.
I would love to travel across the pacific and try some in Japan, traveling for local brews is the dream 🍻

If you're not a fan of mixing by hand when you chill, you can pop a paint mixer into a drill and swirl that baby up like a tornado.
This is an excellent idea, I’ll have to add that step in next brew. Only potential downside is that I do very much enjoy comparing about stirring 🍻

Why do you carb at 30PSI for a day if you're going to leave it on gas for two weeks anyway?
I like to have a bit every now and then to taste how the flavor develops throughout the 2 weeks. But nothing wrong with setting it and leaving it at serving pressure until it’s ready! (if you’re more patient than me)

I tried again, but used sorachi ace instead of moutere hop, still fermenting with Diamond yeast :p

It was pretty good and now I am trying it again, I think I messed up the previous recipe because I didn't notice it was a 3gal batch and I brewed 5 gal with same grain
can you share your water profile before adding the brewing salts?
Sure! This is a breakdown of my base water:
Ca (17) | Mg (1) | Na+ (4) | SO4 (2) | Cl- (4) | HCO3- (8)
It’s pretty close to the “default” water setting in Brewfather (except for the Bicarbonate)!
Is this a 3 gallon recipe?
3.5 gallons into the fermenter! Usually get 2.5 out for the keg, and 0.5 into a 2 liter with a carbonation cap for tasting early or sharing.
Sapporo in US or in Japan?
I believe the first time I had it was in Hawaii? So US but also about halfway between.
How much %?
Right at 5% ABV!

Well I try to keep my videos five minutes or less, but don’t want to add filler to them if it’s not quite at the five minute mark!
