Let's talk mushrooms while we make soup !

  • I accidentally inceptioned myself by listening to a podcast about wild rice and mushroom soup so here is the recipe!
    You will need
    1 white onion
    3 celery stalks
    3 carrots
    1 tbsp butter
    1.5 cups wild rice
    6 cups water (or veggie stock)
    5 bouillon cubes
    200 gr shitake
    200 gr cremini
    200 gr portobello
    1-2 cloves garlic
    1 tbsp rosemary
    1 bay leaf
    1 cup heavy cream
    You can add whichever mushroom you want! I like doing a mix! These where the ones available at the market.
    Peel and chop you onion, carrot and celery. Into a large pot add butter and mirepoix.
    Cut up your mushrooms, I cut them in slivers, add to the pot and add about a tablespoon of salt to allow all of the water to come out of the mushrooms.
    Add the wild rice and move around then add the water or stock and the bouillon cubes. Cook until rise is ready!
    Once rice is cooked add the cream, add fresh parsley on top and enjoy!
