    You never quit. You must be so proud of yourself. That said, I have to add that I love how you edit your videos. But my friend this time was not just the filming and editing it was the MUSIC! How it varies depending on the situation... I was so into music that didn't realized how many times the pancakes didn't flip... Awesome video as always!!!

      I suggest that you use a little more oil. Don't be too hard, on yourself most of us can't get the first pancake right either. I myself have a hard time flip them or an omelet properly. I'd like to see you try making a Dutch baby pancake, they are real easy. You take 4 large eggs, 4 cups of flour and I think for cups of milk. Take a heavy cast iron skillet, add 1 cup of butter and put it into the oven while it preheats to 425 F degrees. While it's preheating you whisk the flour eggs etc in a blender. When the oven is preheated you pour the batter into the pan and bake at 425 f for 30 minutes. It will smoke and maybe set of your fire alarm. It will get golden brown on top and puff way up then collapse like a souffle. You traditioly serve it with powered sugar dusted over it and a squeeze of lemon. Of course you can top it any way you want. I like sweet not salted riccatta, with molasses, ricotta and fresh or frozen fruit. Also almond or peanut butter and maple syprup.

      I think cause you want to keep as much of the air in the batter as possible. If he lets it’s sit it won’t be fluffy

      Batter would have deflated. Souffles have a very short lifespan

    ( I’ve been to Calgary ( Banff actually) and never heard anyone swear, I also have a Canadian mate here in the UK and hardly ever heard him swear.

    Jamie, just came across this old video having been watching many of the more recent ones in your wood toned kitchen. This is such a wonderful example of the persistence you bring to your task of mastering cooking skills. Even when completely frustrated, you are back at the task in the morning with three more ideas of what is causing your "flipping" project. (Pun intended).This look back shows just how much you have developed over the ensuing years. Keep the shows coming.

    Your channel popped up in my algorithm couple days ago and I've been binge watching...I'm newly subscribed, smashing the like button for each video I watch because they're all worth it. The dedication and perseverance you have is inspiring. I love your videos recreating Julia Childs recipes. I remember watching her on TV when I was a young girl back in the 1970's. My Mom had some of her cook books, but I could never follow them (too many references to other recipes to create 1 recipe).
    You've really done such a great job, 👏👏
    I only wish we could all sample those recipes 😋

    I recommend you add like a couple teaspoon of water to the frying pan, because the steam will help cook the pancake entirely, so when you flip it to brown this other side will be much easier.

    Maybe in the future you could just make one pancake at a time until you successfully made it work. You'd have twice as many chances to figure it out with each batch.

    Again, I am amazed by your persistence and dedication. There are two things most recipes will not tell you, however. 1: you need to add some kind of raising agent, like baking powder, to the egg white. Second, it takes a slightly larger amount of fat/butter, to properly conduct the intial heat and seal the bottom. This way, you can cook it longer on a much lower heat, ensuring that they will cook all the way through without burning. How I know this? I adjusted about half a dozen recipes, until I found the one that worked with my type of pan. So yes, I can feel your pain and frustration

    Tip: if you want fluffy pancakes, add a little less than a tablespoon of melted butter. It works like a charm.

      Exactly this. I can't remember the exact one that's used in Asian cuisine but I've been told it's not sold in the US. It's just a food safe stabilizing agent.

      I had no problem but I used a ton of clarified butter in a Calphalon non stick griddle the comercial stablizer is only needed to keep the batter from collapsing waiting for orders or large batches corn star h will do the trick just like we used for soufflés hope that helps

    more hilarity ensues at your mishaps, your editing was masterful and the musical accompaniment on this one was just a little short of genius, Jamie 😉👍...(the mournful music at the next morning failed flipping made me burst out laughing!....and just a tip, Jamie?...any recipe I have ever done where the yolks and whites are incorporated with separate ingredients in a recipe, it's really important to gently as possible, fold in the egg white mixture with the yolk mixture (no whisking at all, at all, not even a little bit)....I think that's why you were having such a hard time turning the pancakes...with the egg white mixture gently blended in but still kind of distinct from the rest of the mixture, the exterior of the pancakes would have cooked and set much more quickly when exposed to the heat in the frying pan (the white of an egg always cooks the quickest)...might want to try that the next time....and not trying to be the boss of you, or anything!...just being helpful ☺)

    Definitely heat and not enough non stick those things seriously effected the outcome. Spatula too 😅 I haven't tried these but I might eventually. I am a chef but kind of anti chef like you. I think a little more butter or oil might have helped as well. Fun videos to watch you have a great sense of humor 😁

    You know why you failed so many time? You forgot to put some water on the pan to steam the batter, not only it'll cook the batter through but also avoid the batter to burnt.

    Amazing ! Your batter looked wonderful and fluffy - the pancakes just needed more time and less batter to set and cook. These look lovely but are a little too fiddly to cook as everyday pancakes 🥞

    I tried these recently and had some moderate success, however the amount of effort and general "babying" the cooking process required vs the reward of eating them did not align AT ALL. They tasted pretty underwhelming, and they also deflated quite quickly after removing them from the pan so you still didn't really get to enjoy a fluffy cloud-like pancake. I applaud your perseverance though - 7 rounds is a goddamn impressive marathon.

    Not sure if anyone's told you yet, but they all use food grade stabilizers that keep them fluffy and full of air. It's not a listed ingredient but you literally cannot make them without a stabilizer

    I'm 7 min in, and I'm screaming, "for the love of God, use butter or oil when you fry."
    1 tbsp. will make them not stick.
    Smearing/drying oil on with a tissue, does absolutely nothing.
    Kudos for keeping going

    I'm watching this again, after getting my 15yr old hooked on your channel. You need more oil in your pan, especially the cast iron (it's all I use). More time with a lower heat, and a good spatulas(flippers)

    Dear looord, why not use a bit more oil/butter on the pan? 😀 or water.. those are usually my first choices if something I need to flip looks stuck to the pan..

      Clever Victoria, that is exactly what I saw in some Japanese recipes. Some used a few drops of water and others oil.
