Fortune normally is only applied to drops that can already drop multiples, so this never bothered me. Also, as Bear mentions near the end of the video, this can still be used for seeds. Good for wandering play styles and for getting a little extra bone meal via composters.
If it's something like a 10 or 5% chance it's not going to be game-breaking yes after a long enough period of time you could dupe logs infinitely but you can also grow them infinitely. And personally I'd rather grow a tree and know I'm getting more logs then keep chopping the same log over and over again.
Mojang really needs to buff some of their enchantments, I'm having fortune 3 should give you on average enough watermelon to craft a new one or just a little bit extra and like if you're chopping down leaves with an ax it should give you a higher chance of getting samplings and sticks. Personally I like to see some updates that go back in focus on integrating things that are already in the game tighter together or new features for order items in mechanics.
if fortune worked on logs, that would break the game. get 1 log, and you could dupe that into infinity

If the game distinguished between tree logs and player-placed logs like it does with leaves it could work.

just dont have fortune on an axe simple solution
to be fair it is also a question of scale. If you break 2 melon it doesn't change any thing but when you break hundreds of them it's way more woth it
