The main point of stirring the wine is to dissolve the sugar, and help in aeration and fermentation. After 10 days the fermentation stops and the sugar is also dissolved. If required, you can store the wine for the residue to settle so that you get a clear wine. If you keep stirring, the residue will not settle and you will get a cloudy wine.
There is no need to boil pineapple, as 10 days is enough to get the juices and flavors from pineapple to wine. Also, boiling pineapple may result in bitter taste.
This homemade wine can be kept outside for 3-4 months for sure, as long as it is kept in a dark, cool place away from sunlight. Refrigeration may loose its taste a bit.

Since it has already sat for 4 days, it may be in an intermediate stage. And at this stage, this is not drinkable. you will need to wait for full 10 days to filter and then use it. Of course, kids should not drink it. I am sorry !!
To make non alcoholic beverage you can always do the same recipe without the yeast and egg and serve the same day. Also, you can carbonate it with a Soda Stream or any other carbonation machine

Hi, using this exact recipe, you can make around 3.5 - 4 liters of wine. If you need only 250 ml of wine, then all you need is a bowl of cut pineapple, you can also proportionately cut the other ingredients too.
For a 15 liter jar, you can fill the jar with 2/3rd of ingredients and leave 1/3 for fermentation. In this case, you can add 3 kgs of pineapple, 3 kgs of sugar to 4.5 litre of water. you may need to add 1 tsp of yeast.

Strictly speaking this is not a pineapple wine. It is pineapple “flavoured” wine. True pineapple wine will consist of fermentation of pineapple juice without adding water. Fermenting only pineapple juice will yield wine with ABV of about 7%. In order to jack up to the wine ABV of about 10-13%, you can add sugar. But there is no need to add water in this recipe.

Longer time after alcohol it will naturally turn to vinegar. Use the fruity vinegar to make drinks, its very health and popular drinks in east Asia
