I never thought about water bath canning apples, but that's a great idea! We've got some apple trees that are productive but the fruit is kinda mushy and doesn't store well. They'd probably do well canned and used in cooking rather than fresh eating.
If I may make a suggestion. There's probably a way that you could probably solve the problem with the Apple Peeler: There are Apple Peelers on the market that can be more securely attached to one's workspace that have underside clamps. That may solve the problem with your apple peeler issue.

The great thing is, you can use the canned apples for all sorts of things like pies or applesauce, baking, cooking, or just eating!

Yeah, it was attached to the workspace securely. That wasn’t the issue. It’s fine, I’m over it, I already returned it.
I was gifted a number 10 can of peeled sliced apples packed in water a few years ago. I turned it into apple sauce and froze it in bags
