Kaiserschmarrn: How The Original Austrian One Is Made

  • Kaiserschmarrn is perhaps Austria's most popular dessert - and rightly so!
    There are various legends around its origins, but they all agree on one thing: The name refers to Kaiser Franz Joseph I.
    His wife, Empress Elisabeth - known to most as Sisi - was reportedly the first person to be served Kaiserschmarrn. We traveled to the Austrian capital of Vienna to find out how the imperial dish is prepared.

    RECIPE
    Ingredients for 4 servings
    Kaiserschmarrn:
    270g flour
    40g sugar
    A pinch of salt
    8 eggs
    400ml milk
    50g clarified butter (for the pan)
    A pinch of powdered sugar for sprinkling
    Plum roast:
    800g plums
    144g sugar
    120ml water
    1 stick of cinnamon
    4 cloves
    lemon peel (grated)
    Preparation
    Kaiserschmarrn:
    1. In a bowl: mix flour, sugar, salt, and 5 eggs. Add the milk, beat until smooth and thick.
    2. In another bowl, beat the whites of 3 eggs, a pinch of salt and sugar and whip to a firm peak. Then fold it into the thick batter.
    3. Heat the clarified butter in a large, shallow pan so that it is very hot. Slowly pour in the batter. Using a spatula, make sure it turns brown on both sides.
    4. Then bake the pan in a preheated oven at moderate heat (hot air approx. 180°C) for 10-12 min. until the Kaiserschmarrn is light golden brown.
    5. Then remove the pan from the oven and tear the finished dough into irregular pieces with two forks.
    Stewed Plums:
    1. Bring water to a boil with sugar, the cinnamon stick, cloves, the halved, pitted plums, and some grated lemon zest, stirring, then continue to boil gently, about 20 minutes. The plums should not have broken down yet - they shouldn’t be mushy!
    2. Fill small jugs with stewed plums.
    3. Arrange the Kaiserschmarrn on plates, sprinkle with powdered sugar and serve with the stewed plums.

      Yep, many times. Although my favorite Austrian desert is the Strudel mit Eis und Schlagobers

      The whites and the yolks are just whisked seperately.
      Then blended carefully together.
      Before being poured into the baking dish....

      I finally notised the chef being so distracted from talking to the camera, while handling the other half of eggs, that he accidentally chucked one yolk into the wrong bowl...

      If you ever get the chance to, you should enjoy this in the Alps. Nothing beats skiing to a restaurant on the mountain face and having a nice hot chocolate and kaiserschmarrn. Makes me happy thinking about the times we went skiing with my dad 👍

    It is extremely important to use as fat a lot of high quality butter... true kaiserschmarm has a beautiful fragrance of delicate butter

    It's the egg YOLKs which are carefully added! Sometimes raisins or sultanas, well soaked in syrup of rum, are added at the last moment.

      Just skip the plum sauce, and add some raisins in the batter instead ! 😋

      Not as sugary as it looks. Powdered sugar is extremely fine, it takes very little to cover an entire dish like this.

      They don't show it, but when I make it the yolk goes in the dough part that you make before adding the whites.

      people say this to discredit it, but it's honestly much harder to mess up a pancake than a Kaiserschmarrn.

    I went to Viena this summer i love your food but it was very hard to find a real traditional restaurant, there were bunch of international ones 😢😐

      😂 Yes, definitely a German/Austrian classic! Everybody has it.. Side note: It's actually a poplar leaf and the company that makes the bowls is based in northern France!

      Yes, their son died in a suicide pact with his mistress at Mayerling. That was the fruit of childhood abuse, which made him sexually promiscuous, resulting in incurable STIs which affected his sanity. The result caused a separation from the Emperor, while the succession passed to his brother, whose son was assassinated in Sarajevo, the flashpoint for the war.

    Austrian Pastry is very similar to French Pastry

      Put it the other way around, please - the French had it from Austria! The croissant, for example, came from the Turkish stores abandoned after the Siege of Vienna in 1683. That's why the generic term for pastries in France is Viennoises.

    The Austrians are famous for making out of a pancake and a fried piece of meat (Wienerschnitzel) a Phd disertation. In basic, it's just a pancake and fried meat. Period
