After watching many of the sushi restaurant videos, I realized a women sushi chef probably will make diff. shape of sushi because the size of our hands. I also noticed that most of the sushi chef has slim hands or long fingers. Only today I realized it affects shaping the sushi. btw, on 4:16, I hope that's not a fish bone.
