- Recreating Mom's 1950s Brownies recipe. This turned out much better than store bought brownie mixes (and I consider myself a brownie connoisseur).

• 1950"s Brownie Recipe
Ingredients:
1 cup salted butter
2 cups white sugar
3 eggs
1 teaspoon vanilla extract
4 ounces baking chocolate
1 1/4 cups sifted all purpose flour
1/2 teaspoon salt (don't forget like I almost did!)
optional: 1-2 cups nuts (I used walnuts)
Directions:
1. Preheat oven to 350F (180C). Grease a 9" x 13" baking dish and lightly flour (or even better, dust with cocoa powder).
2. Melt 1/2 cup of the salted butter in a small saucepan on low medium heat (be careful not to burn it!). Add the baker's chocolate and stir until melted. Remove from heat and set in a water bath to cool to lukewarm temperature.
3. In a large bowl, add 1/2 cup of softened butter, sugar, salt, and vanilla extract, and mix until light and fluffy (about 5 minutes).
4. Add the lukewarm chocolate mixture to the sugar mixture and mix well.
5. Add the sifted flour 1/2 cup at a time, carefully folding it in. Alternate with the chopped nuts if you want to add them. Be careful not to over-mix.
6. Pour the batter into the greased pan and even out. Put in oven and bake at 350 for 45 minutes. Begin checking it at 35 minutes and remove when a toothpick inserted pulls out clean.
7. Set on the counter and let cool. Serve with a tall glass of milk, ice cream, or just eat it by itself.

Hey Steve, great recipe. Tip: Coat the last 1/4 cup of flour over the nuts before you stir the nuts into mixture, that keeps the nuts from sinking to the bottom...same with fruit when making muffins.
Ha. I was going to mention that, too, BUT, I already wrote plenty. 🤣
I learned that trick watching Mom's Blackberry Jam cake video. I guess I figured there were so many walnuts in there it wouldn't matter! LOL!
I think Norm will forgive you. I too loved his humor. Brownies are best with Walnuts for me, glad you didn't skimp on them. 😊

To flour a cake or brownie pan grease then put a tablespoon or so of flour in. Shake it all around by picking up the pan the shaking out the excess flour.

Brownies are done when they cook away from the edge a bit. Youll see the edge get a little hard and rolled. They will nearly always be slightly gooey in the middle.
I have heard of that brand, but didn't know the good Doctor made chocolate! Your vanilla is so light, it looks like honey. That's quite a knock on your knuckle! Hearing you say Chiwahwah was worth both the jokes! (The moth joke did make me laugh!) Have a safe trip home Steven. Can't wait to see the kiddos!!!

If you use cocoa powder after greasing the pan, it tastes so much better than the floured bottom.
I always add a little less than ¼ teaspoon of Cayenne Pepper to brownies, It makes the chocolate richer, and the flavor lingers in your mouth.
Great instructions and helpful tips from your mom.
Can use a little brewed coffee too, gives it a rich, mocha flavor.

@@lucysmith6827 Yes, coffee and chocolate always go together well! My mom would often add her left over coffee from the morning to something she cooked during the day, often to soups or whatever meat she was cooking, or chocolate icing, it adds a deep flavor to food that nothing else can.
@@ginagray603 Since I don't drink coffee, I never have any left over, however, I bet you're right about how much flavor it would add. It's like using coffee for Red Eye Gravy when fixing country ham.
The brownies look yummy. The cocoa powder is to dust your pan after using some type of grease like butter or Criso. You use cocoa for chocolate or dark color cakes and brownies so you don't have white flour all over the outside of what you made. Just like you wouldn't use cocoa powder to dust the pan of a light color cake, blondie, etc. Don't forget to shake the flour/cocoa to cover all sides. Hope that makes sense. Re: the white sugar. A substitute that is healthier would be a natural zero calorie blend that measures 1:1 in place of sugar. I got one that has erythritol, allulose, and monk fruit extract.
I use coconut sugar..

Your mom explained .measure your flour, then sift. Catch the sifted flour on wax paper. Use the amount required for your recipe. The point being. The cup measured straight out of the canister/ bag will be more. Makes a difference. Good luck, brother.

OK how do you lightly flour a dish. You sprayed it then you sprinkle your flour in dish. You pick the dish up shake it around gently tapping dish. that way the flour is evenly distributed and then shake out the extra

The way you flour the pan is after spraying with the Pam, put just a little flour into pan and lift up pan and tap the flour so it shoots down the sides, turning and tapping/shaking pan to evenly distribute the flour to lightly coat the pan. If there isn't enough flour add another teaspoon and continue tapping it to cover any uncovered areas. Then tap out into the trash any excess flour (doesn't have to be perfect). Then it is properly floured. Add batter and bake!
