A little bit of advice when making gollard greens you have to take them apart and wash them good than you have to cut all the stems off, split them down the between to get the middle of the stem after that you wash them again with some vinger and water after that you roll them up and cut them in to smaller pieces. when cooking them you can use either smoked neckbones or ham or smoked turkey necks you cook that first than add the gollard greens into the pot add your seasonings etc. salt pepper red crush pepper flakes sugar if you like that , let them cook down for ast least an 60-90 minutes by than they should be nice and tender. Hope this helps with making them in the future 😀

I live by a small farm. They let us pick vegetables that they grow. One year my sister in law and brother in law were here and we had picked a whole bunch of greens. He grew up in the country and loved cooking greens. I had gotten the recipe for greens from The House of Blues in New Orleans. So we cleaned, trimmed and cook greens all day! He had his batch and I had mine. We decided that both were delicious in their own way! He has been gone for 13 years now! Miss ya Billy!! May he rest in peace! It was one of my most memorable days that I enjoyed so so much. We had so much fun just sitting around the table talking and trimming the greens. Poor momma! I don’t think anyone taught her how to cook! That first bite looked so tough with the middle vein of the leaf still intact!! But she seems to like it so good for momma!!

Born and raised in Mississippi never cooked Turnip Greens that way. I let mine soak a few minutes with salt wash each leaf. Cook with bacon grease until tender. Put in a bowl with cornbread and sliced onions. Enjoy 😉
