In the Before Times, there was a small Japanese place inside an Asian store that served the famous Japanese egg salad sandos. They also served Katsu sandos. We would get one of each and share them. Too bad they did not survive the pandemic. This is an interesting take because it gives the texture of both, and an egg served any way is a good thing ASAIC.
It looks like a tamagoyaki that has been deep fried and served like a katsu sandwich lol. I'm pretty sure that some tonkatsu sauce would go well with the eggs and mayonnaise.
I love your creativity and I’m sure that sandwich is delicious, I still love my egg salad sandwiches though per normal! Only thing for me is I would have difficulty identifying that what I’m eating is egg by looking at that. Still looks delicious though! Great job!

You could do this. But low and slow cooking will really curb any chance of overcooking. If you're worried about overcooking while frying, the moisture leaving the coating will brown before you start to overcook the eggs.

@Lesley Davies lol you are cooking something new, just using an easy to control cooking method. I used instant pot in the same way you use xerox. I've made other custards like baked pudding and creme bulee in the instant pot as well as soft boiled eggs. The texture is amazing and no weeping.

A whip up everyday sando this is not, but lots of good technique here. And it wouldn't be ultimate if we didn't go a little over the top.

may i reccomend adding some potato starch or corn starch if you dont have potato starch into the egg mixture too, maybe even a bit of sugar will help

It would probably be easier to put the foil on the outside of the bottom of one pan, then push it into the other pan to flatten it completely.

The custard will pass through a liquid state from freezing before cooking so there's a good this would become a big mess in your frying oil.
