    I am the son of Portuguese parents. (mom and dad born in Portugal) Kale Soup is Azorean, called soupa de couve . It is a much hardier and chunkier soup than caldo verde. It always includes chourico, as well various meats ranging from pork to beef and yes, even chicken or the broth thereof. Various versions are made including some with red kidney beans as well as others with any type of white beans. It always includes white potatoes. My sister adds sweet potatoes and carrots. Some may even add a bit of cabbage. The soup is chunky as well as hardy. Nothing in this soup is pureed. Caldo verde is a popular soup from continental Portugal. It is simpler and more refined. It is made with only chicken broth, chourico, finely chopped kale and potatoes. Yes, the potatoes are pureed and a touch of fine olive oil is added at the end. Both soups are Portuguese; as Azoreans are Portuguese. However they are not to be confused. Finally weather it's caldo verde or soupa de couve matters little. They are both delicious!!!! But Two technically very different soups with some similarities but major differences.

      My father from the Azors and I have never had purés de potatoes or chicken in the soup just chiroce and languesa and beans red or black or even Fava beans. The islands are definitely far different than the mainland Portuguese for sure .

    My hubby has a recipe for this passed down from his Porteguese mom. I've made it several times and it's so easy, hearty, and delicious! Here is her recipe. 😁 You'll need 2 huge bags of kale, (it all Cooks down) 4 to 6 peeled medium russet potatoes cut in cubes small, 1 to 2 lbs of linguica, Med size bottle Heinz ketchup, (or more if you love it like us!😅) 1 can of rinsed red kidney beans, and salt and pepper to taste. 😊 That's it! All you do is get a huge soup pan. I love using my pressure cooker. You fill your pot with water and start to boil down your kale. It's alot of kale making it so healthy. Then you cut your Linguica (or you can use chorizo!) Into small pieces and add it to the kale. (You could saute it for a minute to release flavor!) 🤩 Add the potatoes next and remember they release water so you don't want to add too much water. Now add a whole bottle of Heinz ketchup to it. Keep it on a medium heat to simmer for an hour stirring frequently. Then add rinsed kidney beans and check for taste of soup. The flavors merry so well in this recipe! 😁I absolutely love it!! Shalom

    I never put tomatoes in it. We didn't have it that way growing up. I prefer the chourizo in it too or a little of both . I like the beans in it but don't always use them.

    The weird thing about Portuguese cooking is that depending what city or Villa you or your family is from determines how you cook a specific food .
