Knowing he used to stutter and probably ADHD when he’s younger this is no surprise. Especially if your working in a stressful job your hands and body constantly got to keep moving.
It's not adhd. Carmy is very likely to have cptsd. (a form of ptsd that includes wider ranging and usually more severe symptoms.) It would explain both his stuttering and being unable to concentrate in school. Ongoing childhood trauma, living with an alcoholic and mentally ill parent, a dysfunctional family who are always arguing. Feeling like a loser, working in a stressful abusive environment. it's all cumulative. Carmy's trauma responses are being activated by the recent death of Michael but his coping mechanism of shutting everything out and focusing on his food is no longer working because food and Michael are still linked in his mind. Carmy became a top chef to spite Michael and to get his attention but now none of it matters because his reason for cooking is gone. Michael is dead and Carmy is now scrablling to find a purpose. He's a great chef but he no longer has a reason to be one.
I hope he gets motivation from Claire or someone and that they will push him to get back into drawing or fashion or both. It’d be so good for him to do something he actually wants to.
What I'm about is this: his nails are short and clean, and because we know he's been highly trained, he has the discipline to care of them, bare minimum washing his hands and trimming his nails, and he's constantly moving, able to handle a lot of stimuli at once, hence the way he switches seamlessly from yelling at one person to another. He also pushes back his hair a lot, even though he doesn't cut it, it helps him focus and recenter on what he's seeing.

I like the fact that they kept the scars on his hands at some points (idk if they are real or not).Anyone that worked in the food industry knows that your hands will have cuts and burn marks... It's just impossible to not have accidents in the kitchen.
Facts
All the knife work in the show is apparently the actual actors, so I assume the cuts are real. This show is like the truest to life in hospitality that I’ve ever seen. Sitting here typing this with knife and glass scars all over my hands, couple burns too.

More oft than not your chef will ask you to wear a hat or if you're lucky you'll get a branded hat for service

On a different note, I love the sibling relationship he has with Sugar. Even if he’s not so open to her, the actors bring a sweet tenderness to the closeness in the dynamic that even I find familiar because I also have brothers
For sure, one thing I love about this show is all of the relationships between characters, they all feel so natural and lifelike in the ways they form, generally exist, and even end.

Ehm... Let me attempt to answer this. WLW people in fandom spaces tend to gravitate toward certain male characters for some reason or another and profess to 'get' them in a way only they can. This includes fixation on less-commonly-fixated attributes. I would actually not be surprised if the reception to this show included Carmy being labelled 'babygirl'.

I don’t look at his hands for the reason y’all do but I think his hand movements make his character.
