Jen the egg bites are SO easy for you to make and you can make a bunch at once, pour them in your muffin cups, bake them, then pop them in the freezer in a big bag. Just take out however many you need and microwave them. I make mine by sauteeing some canadian bacon, peppers, onions and mushrooms. Divide that into your muffin tins or silicone muffin cups, top with a little shredded cheese, and bake at 350 until the egg is set. Let cool completely, then pop them in a freezer bag and take them out as you need them. They microwave really well.
On career changes. I trained as a computer programmer/systems analyst after university. After i had my daughter I retrained as a high school mathematics teacher (ages 11-18), and then moved over to training maths teachers as a university lecturer. All different roles but similar skills, and I loved all my jobs. I took early retirement after working for 30 years as my husband is slightly older snd had retired, and I was ‘jealous’ and we wanted to travel. Obviously not much travelling this year! Haha I’m 39 and my sister is 36 and has 2 children of her own and my mom still fills our stockings and puts from Santa on the presents. Christmas magic is real whether you believe in Santa or not. I can see it’s a little ridiculous that she does it, but I love it and will be really sad if it ends. I am a kid at heart. I eat like a 5 year old. I collect useless crap. I like hanging out with my 6 year old nephew over any one else. Most importantly I believe in Christmas magic. 🎄 Never stop continuing with tradition - even as the kids grow up. They may gripe during the awkward teen years but will appreciate it when they are old.

I seriously just bought about 15 pairs of the $1 gloves from Target online the other day I'm hoping they last us thru the winter months, but since the kids aren't going out to school everyday with the pandemic going on right now the outlook maybe be better ! I am in the process of moving my office home and while I’m excited I’m also terrified! Move day is the 16th and lease is up the 31st. I have scaled back my business because of age, nerves, AND family situations, but I’ve spent 30+ years doing this and boy, am I scared! The Aldi low carb tortillas are excellent, amd I tested my blood glucose when I was on Keto after eating them and they had 0 effect! $2.99! They crisp up great in a dry pan too for quesadillas or wraps.

I feel like I am FINALLY where i should be, been doing corporate travel for 27 Years! and I now work for St Jude Children's Hospital doing all the travel for the families, its first of all a wonderful organization, and working directly for them as an employee. It is the first place I feel appreciated and our work is so tough on an emotional level , but my Team is awesome and we work together and I know at the end of the day I have some good working and making the lives of these families at least easier when it comes to travel, they don't have to worry. I think all my years of putting up with SO MUCH BS in the travel industry prepared me for now. I finally found my end game , I dont have to look anymore!

This is funny seeing that pasta! I could not find shells the day I was getting ingredients for the lasagna casserole so I saw a bag of Lumaconi. Never saw them before. The bag I got they were about the same size as medium shells. I thought jeepers they look like snails. Got home and googled lumaconi which is snail. They worked amazing in that casserole. These chiocciole look very much the same maybe just a bit smaller. There is apparently a huge size people stuff. So that was a hoot seeing you buy them, I have actually been meaning to let you know I used them and they worked amazing. I also did not have enough cottage cheese but had a small container of artichoke and asiago dip so put that in to. That casserole was devoured so fast lol. It is a keeper.

We have a grocery store here called HEB which started in Kerrville, TX in 1905 and is the best, IMO. They were not always my favorite but times have changed and their attention to customer needs is leaps and bounds above any grocery retailer around (again, IMO). So...anytime I see items through THRIVE I always check HEB first and a high percentage of the time they have the items at a remarkably lower price. We all want the Christmas magic. I've got an inflatable Santa who's older than I am and he has a slow leak, but I can't let him go. Every year we inflate him then he deflates and lays by the tree for the rest of the month. So sad. 🤷
PS - The Rao sauce is the best but I saw in your vlogmas video last week they had soups. I got the italian wedding soup which is my fave kind of soup. The soup was good but the meatballs were so mushy. Like a crouton left in a cup of water. 😝It was a huge bummer. I also got minestrone and I’m hoping it isn’t gross too. Fingers crossed! 🤞🏻

PS - The Rao sauce is the best but I saw in your vlogmas video last week they had soups. I got the italian wedding soup which is my fave kind of soup. The soup was good but the meatballs were so mushy. Like a crouton left in a cup of water. 😝It was a huge bummer. I also got minestrone and I’m hoping it isn’t gross too. Fingers crossed! 🤞🏻
