Your comparison to a buffet was perfect.
I have been into board games for 9 years now and my collection is being purged and games that I figured out aren’t my style are going away.
Now I don’t get many games at all, but when I do…. I still absolutely LOVE when a Kickstarter arrives and it’s ludicrous. 3 giant shipping boxes full of expansions and upgrades still gives me that dopamine hit.
Now once I look through it and I realize storage is a problem, that’s a different story.

A long time ago i figured out that I won't be able to hold all games on my shelf, so I have to sell some old ones every time I get a new one. But maybe publishers should advertise some games more like "hey, we are saving your shelf space with this game by condensing all the stuff in the box as densely as we can". But instead, I think that the dominant mentality is still "the bigger the box, the better", or at least "the big box justifies the price".
I think that at least one publisher must try to "save space", and if that project becomes a commercial success and goes viral, only then we will see the shift in the mentality of gamers and publishers. Until then, we will still see the big half-empty boxes that dominates the markets.
