  • I go prawning and crabbing with my friend Brendon, take home, clean, cook the crab, and make some California roll sushi with my amazing girl friend Odessa. I am working on getting more complete footage of my adventures to tell a better and more full story in the future.

    I love making cali rolls with dungees. Some tips for making maki
    1) Lightly roast the seaweed (over a candle, in a mini oven for a few seconds etc)
    2) when rolling try doing it with rice on the outside and then filling on the inside (reverse roll) ... and no this is NOT the traditional way to make rolls in japan.
    3) Use a little japanese mayo(and siracha if you want spice) on the crab meat to help bind it... also adds good flavor.
    4) After rolling cut and consume as soon as you can, do NOT let it sit in the fridge or sit around. Key to good sushi roll is freshness before the nori gets gummy. Rice should be seasoned with vinegar and when first taken out of the rice maker, cool rice to body temp or slightly above. DO NOT let it cool to fridge temp.
    Try these tips next time and you will find the rolls taste even better ;)
