V1 is the takeoff speed when you have to decide whether you continue with he takeoff or abort it. V2 is the the point beyond when the takeoff cannot be aborted. Let me know if I'm wrong but otherwise great video!

Its the Aeronautical alphabet, Papa stands for the letter P. So the callsign for this flight is KLM11P. Its like a flightnumber :)

​@@Nagaraj-rd4vm No, it's just like a flight number, it has nothing to do with a flight number. It is the "identification" of the flight/aircraft for the ATC etc. To communicate with the ATC, the pilots won't use their flight number, but their callsign.
