I let that fall off naturally, or they can get an umbilical hernia that gets infected, or bleed out, if it's torn off. This process takes quite a few hours.

Sometimes you really do need to help it out of it's shell or it will die. Especially if some of the yoke is glued onto a part of the chicks body preventing the chick from sliding out of the shell. Rarely does the mother reject the newborn if human touches it in domestic animals.

Don't help hatch at all. The work of hatching strengthens them.
