I do this in a my Philips pressure cooker. It takes about an hour. I use the broth in a broccoli soup. I use the caramelised onions as the base for my bar barbecue sauces - with pineapples caramelised in my air fryer, tomato puree, lime powder, cili paste, sweetcorn and etc.
Ok so I tried this and added cashew base cream sauce from jaroudi family just before it finish cooking and wow French onion soup! Thanks chef aj for sharing this!
Oh my, they look Soooo delicious.!! I'm thinking I'll use those juices to make a soup in the Instant Pot, and throw the caramelized onions in afterwards.

I have the instant pot that also has a slow cooker option but it did not work as well as my crock pot. I made a chili in the instant pot that called for slow cooking but had to still pressure cook it...
I read that the slow cook function on the IP is terrible because it's no designed the same way. Slow cookers heat all the way around and use ceramic inserts for even cooking. The IP heats from the bottom only. Things tend to burn.
Agreed! I have a Ninja Foodi and use the slow cooker option and it works perfectly. I opted to purchase the slow cooker lid bc using the pressure cooker lid didn’t work that well.

Anyone else have them burn way before the cooking time was over?
Did you use all one type of onion? Chef aj uses one each of yellow/brown, sweet and red. Sweet onions have super high water content and leech a lot of water when they're cooked. If you're using white or yellow onions, you wouldn't get much if any liquid.
Our community is having a catered taco party but with meat. I want to bring a layered vegan taco dish with yummy sauce. Thinking of sauce at bottom, tortillas single layered in a 9 x 13 deep pan or smaller, vegan meat (I used gardein soy meat), black beans, blended pinto beans with salsa, vegan cheese and more sauce and continue layering. Maybe top with dollops of vegan sour cream at the end after cooking. Do you have a great enchilada sauce or taco sauce recipe? I usually just eat a bowl of vegan organic black beans but wanted to do something special. Any ideas?

Chef AJ, both my husbabd and i have gone plant based . My husband has lost 75 lbs. I chose plant based eating because after having been diagnosed with Adrenal Fatigue and feeling so ill to the point of being bedridden for the first time in my life, i said no more no matter what it takes i want to be well.After 4 months on a plant based diet my blood work improved remarkably, i was always normal high since having adrenal fatigue, but from eating plant based my blood work was all in normal range! I have a question for you, you look so great and although you have lost weight your skin looks so firm on your arms, etc. I walk 5 miles a day and do upper body work. How did you keep your skin from being saggy when you loose weight? Sharon california
I tried this starting at 11 am yesterday. I cooked on low in my Crockpot. It is 8 am and the onions are all black. There is no broth to speak of in the pot. This is a fail. Very disappointing as it smelled so great at some points of the cooking. My husband still wants to try it but the onions are literally charred.

I dehydrate them and add them to burgers, scalloped potatoes, meatloaf, etc delicious.

I try to do it in the instant pot and it did not come out as good as the slow cooker so I completely agree with you

The instant pot has a slow cooker function so if you have a pressure cooker you probably don't need to purchase a crock pot.

How can we know when the onions are done? Or overcooked? I am not sure when to stop the cooking. 21 hours seemed to be too much time.

happened to me too. I returned my new crockpot....I think the LO setting is too high!
