  • It's a while since I've made a food video, so here a weird Japanese candy kit where you make edible sushi-themed candy out of various gels and chemicals. Here's how it actually goes together when you don't edit out all the bits that went wrong.

    I got this kit from my cousin in Okinawa. I wanted to make it with my 3.5 year old son, and thought I was going to have to look up English instructions until HE suggested looking up a RUclips video. This is the one he picked. He watched and studied it twice and then we made it together. Great job! Thank you! An intimidated Mommy was saved!

    This is the second time my son and I have made this kit, 5 months ago, and we watched this video both times. When he was 3, he studied this video 3 or 4 times and knew exactly what to do when we started. Thank you very much! A fun (and tasty) time was had by all again!

    To answer one of your chemistry-related questions: Yes, there is plenty of calcium in sea water. The Japanese make use of this for a lot more than just sushi. For example, the primary coagulant for converting silken tofu (which is a thick white goo) into its more easily handled solid form is what they call "nigari salts". These can be either calcium chloride or magnesium chloride (either will work just as well), with small amounts of other soluble sodium, potassium, calcium and magnesium salts as harmless impurities. A fairly concentrated solution of soluble calcium or magnesium works best, but if for whatever reason you haven't got any, then filtered sea water can be used instead, since it contains enough calcium and magnesium to coagulate the soy proteins in tofu.

    Watching this shows me that the people that have terrible experiences making these are clearly not patient enough, and that these should only be handled and made by engineers. Well done Clive!

    The sodium alginate and calcium technique is usually referred to as spherification in the molecular gastronomy world. Bigger spheres can be made by freezing the alginate spheres then lowering them frozen into the calcium bath.

    Myself and my 5 year old just followed your video to make this kit! He's the latest BigClivedotcom convert! Great fun messy kits, although the trick is avoiding the temptation to eat it as you go (which I notice even you succumbed to!). The orange eggs are definitely the highlight of this kit. Great video!

    for the first time since I was a child I actually burst out laughing at the old ratbag comment and I couldn't stop.

    Calcium alginate is still popular as a wound infill dressing. We use it (as a fibre matrix) for management of "difficult to manage" exudative wounds, especially in the Palliative Care environment, (in order to minimise wound bed trauma during dressing changes).

    I found one of these at a local store for $5 US that we and our little girl used as a project a few days ago.
    Honestly, it was a lot of fun to make and the original plan was to share it between her, my wife and myself. Little one liked them so much, we never stood a chance of tasting any.
    Thanks for telling us about this and I was quite happy to find them for sale.

    Just a note, the sodium alginate doesn't have anything to do with the Squid allergen warning. Alginate is derived from various seaweeds (specifically brown algae). I'm guessing the Squid product is squid ink (sepia) in the "soy" sauce, or possible coloring in the putty candy.

    I put together a similar kit for a colleagues post-viva celebration (Job takes us to Japan often, an in-joke), though not sure it it was made by Kracie. It was a cheeseburger set, and instead of being made of candy, it was savoury. Mix the bun power with water, put in a mould, microwave and the result was a soft bread-like bun. Similar things done for the burger, ketchup, cheese, soft-drink, etc. End result, something that looked and tasted similar but not quite like a wee burger (and a hint of ewww).

    Your video was actually far more entertaining than some of the others I've seen with people making Japanese foods like this... They may have done it perfect but it was silent.. And slightly boring.. And I like your accent.

"Moko Moko Mokolet Japanese Style Toilet Candy Kit", "Okashina Salon Hairdressing Candy Kit", and, unquestionably, the most intriguing, "Crayon Shin-Chan DIY Butt Pudding Kit 4". And we used to make fun of Japanese transistor radios...

    Its quite clear they like playing with their food over there. None the less,its always fun trying new things like that. My daughter has a friend that goes thwre often,I will see if she can send sone really unique ones back,not normally located in the US.

    One of the neater sets..burger variety has a bit of nasty attempted approximation of fries and burger flavours. Tries one is neat to make and tastes ok. I have found napajapan has some neat stuff online as well.

    You can use the alginate to encase brewing yeast (it's semi-permeable) and that makes the yeast reusable and you don't need to wait for it to settle out after fermentation.
