Have you read Otto Wagner's "memoirs of a confidant". Quite interesting how in 1936 Hitler was talking abut setting up a Greater European Union with a customs union with Poland, Czechoslovakia and everyone else in Europe. Obviously 3 years later there'd be war, so basically I think Hitler's "plans" for the future changed every week. This video is a nice compilation, though probably far from definitive of all the various writings German leaders made about possible future configurations.

Nothing serious. Like, there were some table talks that were never a part of the official policy, just wishful thinking that were completely void of reason and realism. But essentially, everything outside of the Generalplan Ost was not official and not a priority. Especially for places like Americas and Africa. Generalplan Ost was already extremely optimistic and if successful would take the entire century if not more to be finished and would eat all the time, resources, money and focus that Germany could muster.
Even various topics within the rest of Europe were kinda non-defined (as you can see in the video) as Germans really did not care that much. It was mostly an afterthought. The priority was eastern expansion and reorganization of the order in the east. Everything else was not really planned, but had more of a "we'll cross that bridge when we come to it" vibe.
But sure, you could probably dig out some table talk about Germans planning planetary domination and expanding their influence into space as well. But those were nothing but a simple table talk and fantasies that no one really took seriously. Simply because even their main goal and reason for starting the war was already outside of their scope of possible. It made little sense to fantasize much about Americas, Africa etc.

They even planned to divide the continent into different countries under German control. Roosevelt presented a map concerning this, and while the map was a forgery, it was based off a real map to get South America into the New Order.

If I remember right, Hitler's entire plan was to just focus on the East. If Britain and France hadn't cared about Poland, then WW2 as we know it would not have happened. It would have just been more of a Nazi-Soviet war than anything else, because Hitler surprisingly cared very little for the West and just wanted his own empire out of the way from everyone elses. I suppose it helps that everything East of Moscow was completely uncontested outside of the Soviet Union, so if they had conquered them, then they would have no competition or threats (except maybe the Japanese but considering Hitler called them Honorary Aryans, I'm sure there would have been some sort of compromise)

While what you said about the Hungary-Romania conflicts was true, its important to note that Hitler and some of his generals were impressed with the Hungarian Army at times, especially the performance of the Carpathian Group and the defence of the Árpád line. The only good thing they really said about the Romanians is that they contributed more men. The Romanians were criticized at the Seige of Odessa for using WW1 tactics. Further, Hitler distrusted the Latins, which included romanians. Antonescu was less radical than the very pro-german Iron Guard, so its possible that he would try to side with Italy in the Latin Bloc, bringing the romanian influenced Balkand with it. Hungary had no designes on the lower Balkans and had abandoned its claims on Croatia. This would make them much more cooperative ally.
On the other hand, the Hungarian fascist parties were also anti-german, so they would have likely closed themselves off like romania did in the Warsaw pact.
To me, the choice is such a tossup that Hitler would likely let the two duke it out and side with the winner

With regards to Spain, some members of the basque nationalist party in exile in France sought accommodation with the Germans and there were talks of establishing an independent basque republic on the grounds that they were more aryan than the rest of Spaniards. In fact a few years ago a bit of an scandal happened because some tapes were found apparently of a few German officers going through the Basque Country and investigating its culture and also the names of several high ranking basque nationalist party members was discovered. Interestingly enough, this was not the case with the catalonian nationalists, as while the left wing section sided with the republicans and were the ones in control of the region along with the anarchists during the civil war, most of the right wing which belonged for the most part to the high catalan burgoise collaborated with the nationalists during the spanish civil war, giving them important financial aid and representation in the exterior, receiving in return their land and industrial properties seized during the civil war and many of them would become important members of the francoist state (with many joining the Falange despite its centralist positions) so there really wasn't any attempt on that side to seek an agreement with the germans.

Also there’s a lot to be said about Hitlers view on Spain and the Spaniards. Like many of his views of other nations, his opinions could swing 180 depending on the mood he was in. After Franco “made” Hitler to reject him into the Axis, there was talk of still carrying out an invasion of Spain itself for taking Gibraltar, but when Hitler caught wind of it he refused on the grounds that if Napoleon failed to conquer Spain, that meant that Spaniards had a spirit of resistance and guerrilla warfare that would be a logistical and military nightmare for the German army. Other times he would call them lazy and oriental.

Well, we pretty much know what would have happened because the administrative documents for a post-war Europe exist. They were created by Hans Heinrich Lammers, Chief of the Reich Chancellery.
What I like to imagine, is immediately following the collapse of the Union of Soviet Socialist Republics through Operation Barbarossa and the end of the war in Europe, the victorious German/Axis soldiers return to their respective homelands to a hero’s welcome and with a new sense of pride and honor the likes of which the world has never seen before.
With the war over, the Greater German Reich, the Republic of Finland, Kingdom of Romania, and Kingdom of Hungary all received colonies in the East. The Union of Soviet Socialist Republics is carved up into pieces. The Baltic States become protectorates, while Ukraine and Russia proper up to the Ural Mountains become German colonies. While the exact extent of the colonies varies, the concept is pretty clear. The newly established Reichskommissariat Russland is to be governed by none other than Joseph Stalin with ϟA-Obergruppenführer Siegfried Kasche as Reichskommissar. Adolf Hitler had always admired Joseph Stalin and hoped that with the defeat of the Soviet Union he would rule by his side. Believing his brutal methods and policies are necessary to keep the peoples of Eastern Europe in line. Having reportedly stated:
“Stalin knows better than anyone else, how to handle the Russians.”
But Slavic People would not have had many rights and would be treated as second-rate citizens at best, slaves at worst.
In the west, the Kingdom of Norway, Kingdom of Denmark, the Low Countries, and France would regain their independence with the withdrawal of the Wehrmacht, but with pro-German governments and there are also territorial changes for France and Belgium. Luxembourg was annexed by Germany. Greece and the Balkans would also regain their independence but would be under more firm German control compared to Western Europe.
Citizens from western countries would be partially resettled in lands in Poland now vacated of Poles (also resettled). This consists mainly of Dutch and Belgian people but Danish and French volunteers also welcome as well. They would be given farmland and a farm in Poland.
Gradually, a European Union would be created with Germany as the most powerful member state.
Adolf Hitler wanted this Union to include all of Europe, including neutral nations, but he did not plan on invading any of them if they had refused to join.
The United Kingdom of Great Britain and Northern Ireland would officially not part of this Union but would be closely associated with it, obtaining most of its resources from its Empire while the Union acquires most of its resources from the former Soviet Union (European Russia).
A European Army, Navy, and Air Force would be created, in which German would be the command language.
Healthcare remains a national aspect with no plans for a larger European healthcare system.
Certain aspects such as environmental laws and animal rights laws would be forced on all European countries.
This Union would see the free movement of persons and goods, pretty much like the present Schengen Agreement.
With the free movement of persons and goods, it would be possible to study abroad and find work abroad, pretty much like in the European Union today.
The European economy would be a planned economy to a large extent with fixed wages and prices for a lot of goods. Studies are made about how much a bottle of wine should cost to make the bottle profitable and affordable at the same time, for example.
Historically, currency was never clear. Some plans wanted to introduce the Reichsmark (ℛℳ) as the European currency, other plans called for fixed exchange rates with countries retaining their own currency.

Why would Greenland return to Denmark? Greenland was occupied preemptively by the US, not by the UK, and the US was never, ever going to leave even if the British had signed peace with Germany. The Danes asked the US to leave after WW2 in our timeline, and the US simply refused. If Denmark remained under German control, the US would have simply orchestrated an independence vote in Greenland and then signed a free association agreement or outright annexation. Given the horrors of Nazi rule, 99% of Greenlanders would've voted in favour voluntarily. The same applies to Iceland: the US wouldn't leave and Iceland still would've become a staunch US ally.

It's more than the Germans saw the English as the same as them racially, and as a group that was highly enterprising, successful and good at war. To Nazi eyes, the English were admirable due to the size of their empire, but the reasons why that empire came into being and the reasons why the nazis wanted one of their own were completely different. Hitler himself had to frequently deny that he had an inferiority complex towards them during speeches in the 1930s. The Nazis categorically showed that they misunderstood England/Britain at every turn during and before WW2 and this admiration they had was part of those misunderstandings. Interested to seeing a source for your final claim there.
