This is so beautiful and I hope one day I get to visit this wonderful cafe! Love Italia 🇮🇹
Hope you do! Their sfoglia (puff flaps) are also the best I've ever tried
Beautiful setup … love it !!
Matteo knows what he's doing! Happy you liked the under the bar tour :)
The best coffee in town! 😉
Best sfoglia too!
nice
Very very nice setup !!!! So you make 2 single shots starting with 15g in ? What is the total out 25 out or 2x25 out ? Thanks
Happy you like it! It was, as was the bar owner Matteo Celli, a real discovery.
For Lab 106 blend Matteo uses 15.5g in (filter) and 25ml per cup out (extraction), which would mean 50ml (for 2 cups) per 15.5g freshly ground coffee. I've asked Matteo if that's right - I'll let you know if it's different. At the end of the video he says for different blends he uses different amounts so these calculations are only for Lab 106.
@@madeinitaly... thanks for replying ! With good coffee and good equipement you can push extraction and the coffee is good or even better 👍
No cup warmer? I will pass
can fill cups with hot water for a few seconds before shot
😂
