Hi Titli I've been making my own hot sauces, for a while now. I have never grown Ghost Chilis. I just use Habanero. Or other ones that I've grown. I especially like peppers from Japan and Asia, in general. I bought a selections of seeds, a few years back - online. Wonderful! When making my sauce, I might have used an onion, celery, as well as Bell pepper, etc. I have used both fish sauce, tomatoes and honey in the mix. It's not important to always make the sauce the same way.Adding spices. Like a small amount of cloves or nutmeg, cardamom and coriander. If using a Bay leaf, remember to remove before whizzing, or you'll wreck the batch. Bay never softens. ... Just experiment. Also, if you find a pepper you like, save the seed. Dry and plant in spring. Start them in February, for they have a long growing season. Start indoors. Peppers like a rich, well drained soil. I grow mine, mainly in large pots. Peppers are actually a perennial and by taking the pot indoors over-winter, in northern climates, you will gain another crop. Lastly, by saving the glass bottles. Of store bought sauces. One can store them after sterilizing, in those bottles. They can make a nice small gift and last for about a year, in the fridge. Cheers Jamie.

I made my sauce with your recipe with a few minor changes. I did a mix of ghost and habanero chilis and I mixed up the peppers first and let them ferment for a week. I also added a little sugar to mine. But it turned out great! My wife made the mistake of grabbing my spoon I had used to stir the chili sauce and using it. She won't make that mistake again. lol
Last night I was gifted two Bhut Jolokia (Ghost Pepper) plants... as in the real deal. They're still small so I have a couple of months until I have peppers, but I've already started researching exactly WTF I'm going to do with so many of these devils... I mean I love heat... but I also love my intestines... I've grown rather attached to them over the past 40 years, and I'd prefer they remain, well, attached... So I set about finding EDIBLE sauce recipes for them... I have not laughed this much at a recipe video EVER!!!! You are AWESOME!!!!! So now, after seeing this video, my research has been COMPLETELY derailed, as I will probably spend the rest of the night watching videos from this channel... Good thing I've got some time...

I think the fiber is what you're looking for, so just sub with another stone fruit. Though i'm sure if you use banana, or pears it would be fine. What's a bit of extra water from an apple, when you're chucking spudtatoes in there? XD -Storm
Bruce Daniels i tried making it and did it with a pink lady Apple. and it worked out perfectly. everybody loves it and it was an amazing addition for any other sauces i made.

Titli, I used to grow super hot peppers myself, and had a REALLY bad experience. While making ghost pepper vodka, I'd cut them all up (about 18) into pieces that would fit into the bottle. I had a few that were a bit big for the neck of the bottle, so used my finger. Over the space of maybe 2-3 hours, It dawned on me that I'd got the oil all over my hands. I cannot tell you how excruciating the pain was, and I knew I was in trouble. After scrubbing my hands in washing up liquid, and making the mistake of rising them with water ... I was in a bad way! The oil had made its way into my skin, and was there to stay. Scrubbing my hands with olive oil, veg oil, milk, ice cream made no difference at all. After several hours of agony, I was admitted to hospital. I'm fine eating hot chillis, even if the belly doesn't agree. However that night when I had the capsaicin on my hands, I was in a BAD way. To make thing worse, rubber gloves are no use, as the oil erodes the rubber molecules and just seeps right through.
I had something similar happen with some jalapeño peppers. Scrubbing with baking soda and soaking in iced whole fat milk for a coupl Hours really helped me. But ghost peppers?! Yikes...you poor thing!!
I'm sorry you went through so much pain but when I read this I just laughed and laughed. It happens to me all the time but luckily I only use the regular chillies so the damage is not as bad as you had. Everytime I cut chillies I forget to protect my hands and wash them clean of the chilli residue and every time I pay the price but still to stubborn to learn. I am laughing at myself as much as I am laughing at you. :)

Personally I would replace Ghost Peppers with Habanero Peppers. Not only they are just a third as hot as Ghost Peppers, but they also taste much better. Adding peach to the sauce though... Never thought of that. Any idea how long it will last in the refrigerator?
My bet is that is does! Coat your wings in a fluffy spiced batter, fry, then shake them with a sauce like this. Couple of minutes under a broiler for a more crispy result and a dusting of dried killer-pepper-powder of choice if you really feel adventurous.
Jeremy Laux Most wing sauces are cooked with butter before used on wings so you could cook a little butter in with it to make it work better with the wing but that isn't necessary. I'm sure it would taste fine by itself.
I had to check with the other half that it was not just my dirty mind at play when I watched this one. Titli, you are just fabulous. ps. There is no way I am brave enough to try this, even though I like a nice chilli.
