- A compilation of amazing desserts in India: Kulfi, Falooda, and Ice Gola
Falooda (Hindi: फ़ालूदा) (Urdu: فالودہ) (Bengali: ফালুদা) (also Faluda), is a cold dessert popular in the Indian subcontinent. Traditionally it is made from mixing rose syrup, vermicelli, psyllium (ispaghol) or basil (sabza/takmaria) seeds, tapioca pearls and pieces of gelatin with milk or water. Vermicelli used for preparing faloodeh is made from arrowroot whereas vermicelli used in the Indian version is usually made from wheat.
Kulfi is a popular frozen dairy dessert from the Indian Subcontinent. It is often described as "traditional Indian ice cream". It is popular throughout India, Sri Lanka, Pakistan, Bangladesh, Afghanistan, Nepal, Burma (Myanmar), and the Middle East, and widely available in Indian restaurants in Australia, Europe, East Asia and North America. As popularly understood, Kulfi has similarities to ice cream in appearance and taste; however it is denser and creamier. It comes in various flavours. The more traditional ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio. There are newer variations such as apple, orange, strawberry, peanut, and avocado. Unlike Western ice creams, kulfi is not whipped, resulting in a solid, dense frozen dessert similar to traditional custard-based ice cream. Thus, it is sometimes considered a distinct category of frozen dairy-based dessert. Due to its density, kulfi takes a longer time to melt than Western ice cream.
Ice gola is India's variation of a popsicle sticks. Crushed/shaved ice is molded into a cone shape and doused with flavored syrups and juices. Kala Khatta is a syrup made from the jambul fruit in India and some other parts of South Asia. It is primarily used as a flavoring for Indian ice lollipops or popsicles, sold as street food. Crushed ice is formed into a lump by hand and mounted on a stick to make the lollipop. Kala khatta syrup and seasonings such as salt and pepper are then poured on the lollipop.

lmao... Obviously most of you commenting about them not wearing gloves have never been to these places. I'm from Mexico and they don't always wear gloves. But I'm sure they wash their hands. I have ate at stands many times and have never gotten sick. I would rather watch them make my food right in front of my eyes rather than in a closed kitchen. Lord knows what they do back there...

I tried Kulfi from a nearby indian market and it was locally made. Granted I’m sure straight from india is probably as good as it gets, it’s so so so so delicious. I’m a huge fan of Indian sweets now.

Why are people so mad if they are using bare hands in the videos of Japan too they use bare hands too and people don't even look at the hands but just say that it is amazing and stuff like that.
The people in Japan work in restaurants where the workers have access to sinks with running water and soap. People in restaurant have the ability and are expected to wash their hands and utensils between meal preps. Street food in India is terribly suspect. Do you see any sinks, running water, and soap here? These vendors are out here all day with no possibility to clean their hands, their utensils, or their work stations.
I don’t see any sneeze guards. I don’t see any gloves. What I do see is a bunch of people crowding around the workstation. I see vendors handling money and preparing food at the same time.
I know these people are hustling the best they can to put some money in their pockets and feed their families but I’m not going to gamble with my health. Diarrhea can send you to the hospital and under the right circumstances, it can kill you! If Indian people have this little respect for hygiene on the streets, imagine what goes on in an Indian hospital!

I have never seen a glove worn by a street vendor outside the US. Not in Mexico, Korea or the Middle East. So where is this coming from? Yeah they actually touch the food and others don't but if traveler's were becoming I'll the whole world would know about it! Kulfi is my favorite ice cream after I tried in an Indian restaurant. Dense milk flavor, not too sweet, just perfect. But it is 2 dollars per stick at local Indian grocery store in the States. Kinda expensive for such a tiny portion. Nonetheless, they are the best

Atleast fast food restaurants are more established that these guys., Fast food chains undergo inspections, quality checks, and issued permits.. cause they are own by a company so i guess its more safer eating in a fast food restaurant that seeing your food poorly handled and process that way.
@Ipsita 11 I really don't know where you were coming from, but all I'm saying is majority of fast food restaurants are more hygienic contrary to patty gonzalez was saying. Me myself don't mind eating street foods as long as i know that it was done properly and clean. Being a hrm graduate and being working on as a banquet or food industry i must know if a food is being handle good or bad, i practice hygiene and proper food handling for almost 6yrs now and I have a tons of certificates and training in this matter so i know the meta of food handling. I don't care if you prefer to eat on your on way, thats on you. My only concern is the practice of these foods/beverage being processed.
Those desserts look yummy! Will definitely try them when i get the chance to visit India. Preparations with bare hands is no issue. I'm sure they wash before handling food. Just hope the guy who dropped that chunk of ice cream didn't include it in the cup. Agree with those who said that it is good to see food being assembled in front of you! I also get to watch and learn. Amazing!
