Camp Cooking - Pizza Soup Recipe

- In this camp cooking video, I share my recipe for Pizza Soup. Pizza Soup is something that hits the spot when you are either in the mood for something different or craving home made pizza but lack the time or ingredients to make it. It is very simple to make and is made completely to taste.
The base for the Pizza Soup is simple:
1 can of condensed tomato soup (add a bit of lemon juice if it's too sweet)
Italian Herb Seasoning
Garlic Powder (preferably roasted)
From there, build your pizza soup with whatever traditional (or non traditional) pizza ingredients you wish. Today I kept it simple with Pepperoni, Onion, Green Pepper, and Mushroom. Add in small chunks of fresh mozzarella and parmesan cheese to complete your pizza and dig in! If you are one that considers a crust to be essential for a good pizza, add 3 or 4 sourdough pretzel rods to add a "crust" to the soup.

I just got back from the store with all the ingredients. We usually do pizza on Friday nights so Joe's Pizza Soup is on the menu tomorrow! Thanks again!
That was REALLY good, Joe! My family loved it! I forgot the pepperoni, so used turkey kielbasa instead. Sauteed until a little crispy with onions, peppers, a little fresh jalapeno, it worked great! With lightly toasted light rye bread, they didn't miss our usual pizza at all. I think this is going to be a frequently requested meal around here. Thanks again for sharing!
FWIW, I used pre-grated pizza cheese, because that's what I had on-hand. It worked well, but I think bigger chunks like you did would have been easier and less messy to eat.

Joe, this is the best campfire soup idea I've seen in a while. I'm definitely trying this one. Love pizza. The pretzel sticks are the icing on the cake, so to speak.
I make a potato/hot sausage soup when we go camping that is, out of sight, off the hook.

Joe, Sorry for getting back to this so late. This is a campground recipe, I don't have exact measurements on ingredients. I start out with 7 medium potatoes. half red and half russet. One large onion. One roll of hot sausage, ant brand will do. Two cans of mushroom soup, the creamy kind. One small container of button mushrooms. Two tablespoons of minced garlic. salt to taste. I usually fry the sausage and mushrooms first. Set aside. In a large pot, cut and cube potatoes. I like skins on mine. Cut and dice onion. Add water so that its a half an inch above potatoes and boil until done. I like to boil a little longer so the russets break down. At this point add two cans of mushroom soup, sausage and mushrooms, garlic. Then you would add more water. Let cook down. The amount of water will depend on how thin or thick you like your soup.
Of course this makes a large amount.

Great video Joe and a delicious idea! I like the pretzel and crouton ideas. He is my idea. Soft Flour tortillas or corn chips or even saltines, cuz it's more or less kinda like a chili. If you used the soft torrilas and had a thicker sauce, you could make pizza roll too. FYI too. I saw them advertised and our local grocery store had them. They are made my Hunts. Come in a box of 6. They are 2 tbs pouches of tomato paste. They could come in handy, camping or hiking. I might pick up a box soon and try thrm out and let ya now what I think.
All those would work well I am sure. The main reason I went with sourdough pretzels is because 1) they are crunchy to give it more texture and 2) it provides that yeasty sour flavor a lot of pizza doughs have.

Yep, we're working on it here. Western NC can have some seriously short winters. Can have, mind you. It isn't too rare to have a foot of snow in late march/early April either. We're bouncing between 35-55 deg days right now and that just happened to be a 55 deg day. Thanks Mark!

Very good idea! I've been wanting to try something like this for a while now actually, but didn't really know how to go about it. And I spy a stainless genesis! :-) I'm loving mine but still trying to get used to transitioning from my scandi's to the convex after only a couple outings with it.
It takes time and a bit of a learning curve. And an adjustment of what is expected with each cut. Convex's are different then Scandis for sure but I certainly have come to appreciate them. Thanks William!
