You can cut the acidity in tomato sauce using veggies like carrots instead of sugar. I also like to cook broccoli into my sauce. But it’s really hard to cook tomato sauce from whole tomatoes. I find it’s a bit watery. But you can buy organic tomato paste to add to it to stop that. It all comes down to finding a good recipe online.
You can buy crushed/diced tomatoes in a can or a carton with no added salt or sugar! Takes out the work of having to peel the tomatoes and its easy and ready to go! Just add whatever spices you want. I haven't bought an actual jar of pasta sauce in years
