I had it both ways filming and re-testing things today folks. I had plants work fine when fertilized just once in any season and times where they needed multiple per to get going and after every harvest so it looks like they are just as janky as I remembered and mentioned... 😅
I've found the plants are sensitive to how recently you've logged; if you just arrived in the world (via Sky/Seaworthy) and/or just started the game, and it's not dry/summer, most plants will wither immediately as part of their "it's not dry/summer" state. How much ash they need to revive depends on how many harvests they've been through. It seems these coffee plants will need ash equivalent to their harvest quantity. If you've harvested four times then log/world hop, they'll need four ash to bring back up. This doesn't track 1 to 1 but seems to correlate; more harvests prior to withering means more ash to bring back to a full state. Sometimes these plants will get stuck and won't accept more ash even though they remain withered and need a worldstate shift (going to the volcano/caves/house interior) to make it so they can accept more ash. The replanted coffee plants seem to remember how many times they've been harvested, so if you play a short session and only get one harvest in, they'll remember they're at 4/5 harvests (or 3/4) and only require one Ash to bring them back up. If you play a longer session and get multiple harvests in before closing the game, they'll need more. Generally as long as the season hasn't shifted to an instant-wither state (summer>autumn or dry>mild) and you've stayed in the same world and game session continuously, the plants will behave like expected: harvest 4 or 5 times then refertilize accordingly. But if you close the game or worldhop, they freak out and instantly reset back to a brand new, just planted state after a few seconds. Sometimes they will freak out also during seasonal changes for no clear reason, probably a gamecheck state to see "is it dry or summer? If no, wither regardless of their fertilized state". They seem to care more about Shipwrecked/RoG seasons than Hamlet season, but sometimes transitioning to spring will "instantly" bork an entire field for me. I've also also had these weird coffee plants that ignore all of that and don't need special tending. I'm not sure why, but it always seems like 1-4 of a replanted field are the hardy troopers that barely care about logging/relogging/world hopping and/or fertilizing at all. I also vaguely remember a rumor about coffee plant behavior being dependent on world-gen with some worlds being more tolerant of gamestate changes than others, and the only way to know which type of world you're in is to dig up the coffee plants and observe their replanted behavior. If you get the really picky plants, there is no way to change this. I have two well-developed worlds (500+ days) where one's world's coffee plants seem more forgiving than the other's, but I can't really confirm or deny this rumor. Hope this helped!
