To be fair at my work we do cook the eggs in the oven- but its a really fancy oven!
Since my nursing home needs to cook 100+ poached eggs every breakfast, the chefs put them in shallow baking pans and then puts our fancy pressurised oven onto the steam setting in order to get them all cooked at once.
Freshly ovened poached eggs for everyone!
