While I was watching this I have to say your technique is really different from the other videos of butchers I have seen. The one butchers I watch the most is Bearded Butchers. If you haven’t watch them you should check them out.

I also have a good understanding and experience compared to your meat cutting. It can be done as soon as possible. I have a hope to work as a butcher in a foreign country. Interesting how different the terminology is around the world for different cuts, after nearly 40 years in the meat industry the different steaks and style of breaking down the beef was quite interesting. Well done.
I am a retail side meat cutter and i am interested in seeing how to break down primals and then the smaller cuts like inside and outside skirts denver or even flat iron.
Cool video. Didn’t realize how many good steaks I end up grinding into burger. I butcher once a year so I will subscribe to have your videos for next years beef.
Awesome job! I was a meat manager for 15 years and you nailed this. Too bad the meat quality looks like select though. Then again, if you cook it right, you can make any piece of meat tender.
That's a great question! It is sold to a rendering company, sorted, and resold to other industries for use in things like cosmetics, organic crop fertilizer, and even medicine!
We process beef for a lot of local farmers. I can't remember exactly where this one came from, but it definitely wasn't finished enough. Hopefully the content is still helpful!

You are right! This was one of our bulls, and they don't tend to marble as well as the steers. It still tasted good though!
